I’ve a book (not this one!) which I’ve used religiously for about fifteen years and i swear by it but it’s hard to come by - very expensive now - but this is a great alternative.

Brian: Canning and Preserving for Beginners is one of the best "how-to" guides I have seen in recent history. The book starts from the beginning of the process, and by the time you are done reading the introduction, you almost feel as if you are a canning master. Canning and Preserving for Beginners impressed me by talking about safety first. Many cookbooks and foodie style books don't get in depth into safety, but this book goes so far as to give altitude charts so that you can be safe pressurizing your food in any city in the US and Canada. It also begins with explaining food acidity and the correct PH of certain foods so that once your food is canned, it won't spoil. Aside from the safety aspect, Canning and Preserving for Beginners offers it's reader two canning options, the water bath (canning with hot and cold water) as well as the pressure system. Both canning systems work great and will give the canner the ability to preserve their food for a long period of time. The book also lists recipes in regards to the canning process. After reading Canning & Preserving for Beginners The Essential Canning Recipes & Canning Supplies Guide from cover to cover, I can say I was happily conditioned into knowing the essentials about this process. Having not known a thing about "canning" before beginning to read, I thought I was going to be putting food into cans. But what's in a name? It was clear from the start that the food was going to be processed in jars.
My interest was piqued at the outset, and I found the book to be extremely informative, and it also gave a good background as to how and why this practice had developed. Not only is it economical monetarily, it is also saves time in the long run. It is a good common sense approach to this method of preserving food. It introduces the two different techniques of preservation: the water bath method, and the pressure canning method. So the book is divided into two sections, each devoted to one of these processes.
