rexpeper: I do a lot of dry aging and smoking meats making beef. Turkey and this knife is fantastic. It's very sharp, it's got a little flexibility to it. The handle is easy to grip and it looks very nice. Running it over a blade hone. Definitely keeps it nice and sharp glad I decided to pick one of these up. Must have if you do a lot of cutting of raw meats. Cooked meat anything like that you won't be disappointed

Markus Wengert: Optisch sehr schönes ausbeinmeisser.
Habe es als ergänzung zu dem geschmiedeten kochmesser evenfalls mit dem palisandergriff gekauft.
Verarbeitung wirkt sehr hochwertig, jedoch handelt es sich hier um eine gestanzte klinge und das merkt man auch an der schärfe im direkten vergleich. Es wird seinen zweck erfüllen und ich war mir dessen auch bewusst. Ob die geometrie der klinge sinnvoll ist oder nicht wird erst noch die zeit zeigen.
