MMore Ohio: This is a top quality boning knife. I used it to go thru boston butts and beef sirloin sholder. Cut up 4 butts 10lb each and 60 lbs of sirloin shoulder. No need to stop and resharpen, it cut them up like butter. Great knife for everything, fish fillets to removing silver skin.
