John CJohn C: I love this knife! The handle is surprisingly comfortable to hold, and the blade came super sharp out of the box. I could use this knife for hours without wrist fatigue; in fact, I had no idea how cumbersome standard handles can be until I tried this. I may never buy a straight handled knife again.
The blade is thick and heavy, like a cleaver, and has no flex to it. The steel is extremely hard and I already chopped through a beef rib without any damage. I don't recommend chopping through bones, that should over time dull the knife, and it is wonderfully sharp, so enjoy the smooth feel and easy maneuverability instead. The blade shape makes it easy to turn or follow a curve. The thickness takes some getting used to when slicing, but I am now slicing cold beef, onions and radishes paper thin.
The blade is not stainless, despite it's shiny appearance. My pic shows some rust and discoloration. That is an indication of harder, more durable steel, but it should be cleaned, dried, and oiled after every use to keep it shiny.
I have a slightly smaller and lighter but otherwise identical knife also bought on Amazon. It is of the same quality, but this knife arrived sharper.
