Shaukat A. Husain: This is a book I used when I was a student and have given to my sons and friends who are interested in cooking Indian / Pakistani food.
There are many other books but this is all you need.

Scotlanda: I like Madhur Jaffrey’s writings and I love her recipes. This cookbook is an oldie, but a goodie. It is her first cookery book and contains more background information and a seemingly larger selection of recipes than The better-known Indian Cookery, which introduced Indian food cooked at home through the cookbook and accompanying TV series in the 1980s.
I have had nothing but success when cooking anything from this book. All recipes are detailed and explained very well. There are no pictures in this book, and because it is an old skool edition it’s packed full of information ,tips, anecdotes and history of each recipe , I didn’t feel that glossy photographs were needed. All the recipes you could ever want are here in this book. I have about a dozen of Madhur’s book, some are more modern, incorporating shortcuts or using less oil in a dish. This one however is one of my most used and favourite cookery books and in my opinion a must for anyone who appreciates traditional Indian tecipes from a legend.

VickieMouse: This book was one of my first Amazon orders. I will always have a special place in my heart for it. Ms. Jaffrey has taught me so much about how to cook Indian foods, although I don't utilize much of her book contents because I am a stubborn vegetarian. One of the dals in this book is a forever favorite, though, one prepared with cabbage and tomatoes.

Amazon Customer: This is a good place to start your adventure into Indian cooking. I just took the book to my local Indian Grocery store across town, The young lady there got me all the spices she said I would need. Spices were very inexpensive, big bags of them too. It explains that you heat the oil (or ghee) up pretty hot before you put the spices in. Cook the spice a minute, THEN put the food into it. Much like Mexican cooking. Their rice is so fluffy in the restaurant you would think its impossible to accomplish. The book says wash rice really good and SOAK for 15 minutes, drain well stir into the oil and THEN cook. I tell you this Basmati rice is EASY! Came out just like the restaurant rice! Conclusion, INDIAN FOOD IS INEXPENSIVE AND EASY!

shobdobonik: I don't know why I waited this long to review this recipe book, it has been my companion for 6 years. I moved to the U.S. completely unaccustomed with the rituals of cooking. But my Asian heritage did leave me with natural cravings for our traditional cuisine (which is very close to North Indian cooking). I was in a fix. About the same time, a friend (another transplant) prepared a dinner for me using the recipes from this on a dreary Boston winter night. Thus, the journey began. Incidentally, this was my first purchase from Amazon.com.
The recipes are very precise (a key factor for people like myself) and turn out delectable, provided you don't screw up too much.
But more importantly, it is my use of this book as a leisure reading that prompts me to review it here. Jaffrey's language takes me back to another place and time. When I read her description of saffron or gajar halwa or lassi, it tranports me home.
