V. Evans: this is the book that gives you the timing for everything you want to can, guidelines on canning procedures and pretty much all the info you will ever need. I was disappointed that it didn't have any dairy or non dairy but that's because no one has ever bothered to test that. Otherwise this has all the info you need to know.

cindy gilmartin: This is the first book a canner/preserver should own. It has the most up to date processing times and pressures as well as how to prep items for safe storage and consumption. This is not a recipe book, but all canning recipes should be compared to these instructions to be sure they are safe. There are some absolutely crazy online recipes and videos available that do all kinds of unsafe practices and look so wonderful, but food poisoning is a real thing and can be devastating. Once you learn the proper procedures, you can see where you can work around those recipes to create your safe version.

200m400: Diese Datensammlung ist sehr wertvoll. Die Ausgabe enthält zum Beispiel auch Abgaben zur Meereshöhe, welche die Einkochzeit erheblich beeinflussen kann. Leider wird die Ausgabe nur in Schwarz/Weiß geliefert und die Papier-Qualität könnte für den Gebrauch in der stets feuchten Küche auch etwas besser sein. Aber die gelieferten Informationen sind wirklich TOP !

Saydee: I purchased this book because I am new at canning. This does lay out the basics. I would like it better if it were a spiral book. This would be handy to cook and re-check the information if the book could stay open to the page I need.

Hey9irlie: Bought on advice of someone on youtube. Tells you what needs pressure canning and what needs water bath canning. Also tells you pressure needed for your area. I knew I was buying a pamphlet but I think the recipe section at the back is an added extra this year and that was a nice surprise. I feel as a beginner that I could quite happily get started with only this book and help form the internet. Great price at circa £7. Minimal pictures for those who are more visual so you might need to watch other people online if this is something you need. I already feel though that if I could only use one book this would be the one I pick.

Trall: In March 2020 I received this book. It is big. 8.5" x 11" and 1/2 inch thick. It has a lot of information. The book says it is the 2020 printing, but the version is the Revised 2015 Agricultural Information Bulletin No. 539. I assume this is the latest version, but I don't know for sure. The cover is color and everything in it is black and white. Easy to read. This is a much better book than I was expecting. You will like it too. I am new to canning, but this book seems to cover everything, including high altitude directions and adjustments. It truly is a Complete Guide to Home Canning.
