Amazon Customer: I bought barley flour because it’s lower GI and carb and higher fiber. This flour is nearly 4x the carbs of actual barley flour. On the front bottom in small print it says “mixed with other flours”, yet the ingredients on the back says only barley flour - very misleading.

Update: My mistake, the front does not say “mixed” with other flowers. It suggests to “mix” with other flours, so it is pure barley flour. As a result I added two more stars to make a total of three. It will work well for your baking needs. I used it for Cornish Pasties and it made an excellent crust. However, if you are buying barley flour because it’s usually lower carb, then pass on this. It is still about 4x the amount of net carbs than other barley flours. Perhaps because it is overly refined and has had some of the fiber extracted. Their serving size is one table spoon, where as other barley flour’s serving size is 1/4 cup - still a bit misleading.
