I have a few other Global knives, and this one is just as sharp as the others. This is a forged knife in the GF series, and it is just bit heavier than some of the others. It's definitely a high quality butchers knife.

We BBQ a lot and I have several global and shun knives. I wanted a knife that would be a pleasure to use to separate and trim specific cuts of meat. this knife does the job well. its smaller than I perceived for some reason but more than adequate for trimming large cuts of meat. It stays sharp and easy to clean.
