R. G. Barker: I must admit, this book was not quite what I was expecting. However, I do have a soft spot for Madhur Jaffrey. I am an ex-pat Englishman now living in New Zealand, thinking about eating a lot more vegetarian curries.
What better place to start than Madhur for an Englishman?
She is pretty much a national institution in the UK, and her books demand respect. And I am willing to give that respect.
I honestly never knew that there were so many choices for "home cooked" Vege dishes.
A very well presented book that I will treasure in my collection of world wide cookery books.

Anusha: This is by far one of the best cook books I own. I am South-East Asian/Indian and am not bothered by the fact that there are not enough pictures in the book as some other reviewers have stated. I also don't think I would dock 4 stars and review a cook book based on the fact that there was a editorial error in the location of a city in India (re: see one of the 1-star reviews). What I can say is this: as someone familiar with this cuisine, it is wonderful to have precise measurements for recipes that have been imbibed through 'seeing' my mom, aunts or friends cook. It's also great to have different ways to execute these recipes, especially if you live outside of India. For example: the oven roasting technique that some recipes use is a great alternative to roasting the vegetable in the traditional, laborious way; especially if you are trying to cook while balancing multiple other priorities in a given day.
Madhur Jaffrey also does not fall prey to one thing that I have come to abhor with other Indian cookbooks - the recipes get watered-down to be more accommodating. I don't get this at all since I would rather err on the side of having an authentic recipe and tweaking it to...

helen umpleby: Love this book. We are cooking our way through it...as with most cookbooks, not all recipes will make the " regulars" list, but have already discovered a few that will.

Amazon Customer: Initially bought this for my brother as a wedding present. When it arrived and I flipped through it I bought a copy from myself. I am from North India- from Punjab but thought this would add to the considerable recipes from my grandparents because Jafri incorporates great recipes and flavors from across the diverse culinary cultures of India. As a gift it is wonderful and presentable with gorgeous full page color pictures and nice feel to the pages/book. Can easily make a coffee table/display book.
We have thus far made several recipes including sprouted bean recipes (excellent), bhartha. I appreciate that her recipes are simple- made to be prepared daily. I am a working mom so certainly there are ways to make these recipes doable during the week- On a day off chop/process a bunch of onions, chop I also like that this book has a good introduction section and comments on each recipe which help to make them approachable for a novice cook or one who is new to Indian food/veggies/spices.
My only piece of constructive criticism: My grandmother introduced me to kathal (jackfruit) many decades ago as a meat substitute in her curries after I became vegetarian and I wish that...

A. F. H.: This is an excellent cookbook for home cooks of all levels.
First off, here’s some demographic information so you know where I’m coming from: I’m a mom with a school-aged family, and an experienced home cook. We are not vegetarian, but we eat mostly vegetarian meals, consuming a small quantity of meat or fish maybe once a week usually as a flavorful accent. I tend to prepare small, light, vegetable-based meals with a focus on intense flavors. I love variety and try to cook multiple brand-new recipes every week, interspersing them with dishes from a very large collection of known favorites.
So I’m always looking for good cookbooks which have new techniques and flavor combinations I can add to my repertoire, new dishes I can interweave into a week’s menu, new treatments for familiar vegetables, an introduction to new-to-me ingredients, and versatile recipes I can experiment with to make variations of my own. I am less concerned about the authenticity of recipes than I am about the tastiness, variety, and difficulty of the recipes. So I can’t comment on the authenticity of these recipes, or whether they are unusual or common, or about how well the different...

Denise: This book is amazing. I only tried one recipe so far, but it was phenomenal. I have several others bookmarked to try. The best part is that the recipes are not intimidating and do not appear to be too time consuming. Very pleased with this purchase.
