Emma Devis: So far, I've made 7 or 8 dinner recipes out of this cookbook; each one a win. There is a photo (or photos) for every recipe (I love this). The recipes are not too complicated but they are delicious. Do you know how with pressure cookers or slow cookers, sometimes everything in the recipe just becomes kind of a mushy mass where every recipe kind of ends up looking and tasting like another? This cookbook helps you avoid that with interesting recipes that turn out pretty close to the companion photograph. Most of the recipes can be easily adapted for stovetop or oven too. As in, I (a non-chef and not-very-good cook) can adapt them. Mostly, I'm disappointed with cookbooks, seeing as they don't cook delicious meals themselves. This is the first one I've been happy with in a long time and I just found out the author is on the internet. Look for Eva Evans. Overall, I am very happy I purchased this book.

Amazon Customer: OMG! I cannot speak more highly about this cookbook. I know I’m years late to getting a pressure cooking device but we finally got one and sought out a cookbook for it. We didn’t get the Instant Pot name brand device but it doesn’t matter, the concepts are the same thing with this book.
It is not hyperbole when I say that every single meal we have made from this book has been absolutely fantastic! The ONLY thing about his recipes that my wife doesn’t care for is she feels some of the recipes call for too much-seasoned salt. I happen to disagree but that’s a personal thing and we just back the salt off a bit and I add more to the finished dish to my liking.
If this book was $50 I’d still recommend it to you. It will turn your pressure cooker into a gourmet meal maker guaranteed. I never knew I could make such amazing but simple dishes with a pressure cooker. This has been such a great book and I HIGHLY recommend it to anyone!!!!!!!

Lana ThornLana Thorn: Along with my Instant Pot purchase I wanted to buy a vegetarian cookbook to help me get started. This book is FULL of recipes that you will actually use. I haven't found a "dud" yet -- very easy and tasty. The book has expanded my use of my Instant Pot -- exactly what I wanted. The recipes in this cookbook are carefully crafted to ensure plant-based content. I can attest that all recipes I tried are very filling, yummy, and easy to prepare. This book will teach you how to make your favorite Instant Pot takeout food right in your kitchen and will save money on takeout. I give a high score to this book for its content and design. If you have never cooked vegetarian food before, this book will be use full to you. I recommend this book.

TOP 100 Amazon Reviewer: The media could not be loaded. Although I am not a vegetarian, most of my meals are vegetarian (I’ll have seafood or chicken, typically two meals a week), so I was excited to have a vegetarian recipes cookbook, especially for the Instant Pot. The instructions are clear and easy to follow. There are beautiful color photos of many recipes, which is a feature I like in cookbooks. The cookbook does not disappoint!

EH-C: This book is a very strange combination of recipes, which follow on from thirty pages about the virtues of vegetarianism for weight loss. I wasn't looking for a weight loss book, nor do I need any convincing to become a vegetarian. I simply wanted a book of vegetarian recipes that could be made in the Instant Pot to save me standing over a hot stove or by the hot oven.
There is no advice in it for using the Instant Pot to cook different types of rice, or the assorted different pulses and other sources of protein that we, as vegetarians, like to eat.
I found it rather strange that macaroni and cheese was included in the 'breakfast recipes' section. I wonder also if the author is aware that gelatin is made by boiling animal skin, tendons, ligaments, and/or bones with water, so it is not suitable for vegetarians (it is an ingredient in the 'Pumpkin Pudding' recipe).
I will be returning this book.
NB. Upon re-reading some of the other reviews of this book, it seems that they are not actually reviews of the text I received. My copy did not contain the recipes mentioned by other reviewers, nor did it have the guide to pulses and beans mentioned by one reviewer.

Debbie: This book was a great addition to my collection. It provides clear, easy to understand recipes that are tasty and can be made after a workday. I have health issues, so I need quick, easy and healthy foods options. It's so nice to do minimal prep, then set and walk away. A few favorites are the smokey white bean soup, mushroom kale stroganoff and the Alll the garlic red sauce. My meat eating friends/family love those recipes too.

Kelly: What I was hoping for ...a cookbook that talks about how to make balanced meals using plant based proteins and also familiarizing me with vegetarian/vegan staples and how to utilize them to make complete and nutritious meals with the instant pot.
What I got...the first third of the book is basically written in the style of a poorly written click-bait article that also fat shames, repetitive, poor grammer, unclear language and sentences and just not professionally written at all. There are no color photos in the book (is this the 80s?) There isn't even a recipe in the book for the falafel on the front... there were a lot fewer recipes in the book than I anticipated and the breakfast ones were super repetitive.
I've seen better written blog articles for free, so to pay for this as a reference material for my kitchen is just not going to happen. I'm returning it.
