Zeke: I cook meals for myself only and all recipes in this book make 8 servings or more. I was hoping for recipes for 2 or even 4, but 8 is a bit much. I'm returning the book.

ajones: Really tasty sounding recipes. I haven't cooked from the book yet because I just got it, but it beats another diabetic cookbook that I recently received.
Good, simple recipes, with good ingredients. To the point, but with a few color photos here, and there. Lots that I want to try. Do-able ingredients that fit my budget.
Make sure to read the carbs count on each. There are some that you might need to adjust for your allowed carb range.

KP: I bought this book hoping to find some recipes my husband will eat. The recipes in this book will not even make it to his fork. He is not into anything healthy . Calling him picky is an understatement. However I think the recipes are pretty simple and if you have a diabetic person in your family who’s not afraid of eating healthy this is a good book.

J. WarnerJ. Warner: The book "Quick Diabetic Recipes" is poorly written at several levels. Too many of the recipes are not quick to prepare. Example "Spicy Turkey Chili" requires that beans for the recipe be freshly cooked, which takes hours. Another receipe calls for homemade seasoned bread crumbs (see chapter 14), and so on. To many custom ingredients, requiring a huge time investment. The receipes generally taste good, but most are not quick receipes. As a single person time is always at a premium: time to shop, time to cook, to clean up after, along with everything in life. Time is scarce in modern lives. This book dissapointed.
