It easily handles 10" wide slabs of bacon, bulk deli meat, roast beef for sammies, and sticks of pepperoni. I only have the serrated blade it comes with and have never found a need for the optional smooth blade.
Where it really shines is cleaning. The $80 slicer I had before was such a pain that I would think twice before using it for small jobs.
The food carriage rides in slots in slots in the base instead of a flimsy tube and keeps everything aligned. It unlatches and comes off without having to unscrew anything and the thickness mechanism pulls off with ease. With everything removed, the base is pretty easy to wipe down with only a couple of nooks that take a little effort to clean. It takes about 15 min to clean and reassemble.
When this one finally dies I won't hesitate to replace it with the newer 615A.

I bought this product in 2014. It is now 2022. The product is far from perfect, but with some care it can do a very nice job of slicing. However, if it breaks outside of warranty, the company will not sell you the parts you need. I had a nylon bushing break and, if they had sold me the part, I would have had the slicer up and running in less than ten minutes.
Now, however, I have a pile of junk. So, yes I am disgruntled, but this review is going to be fair, and will tell you exactly what to expect if you do purchase this product.
First, it can slice very well, and does a great job on meat and vegetables. I can do a good job on cheese, but not on large pieces, more than an inch high. That is how I broke my slicer (more on that below).
The slicing control works well, but it doesn't give you fine gradations at the thin end of the adjustment range so it can be difficult to dial in a really thin slice. In...

Don D: Very sturdy build quality and the unit comes apart easily for cleaning. I have cut bread, vegetables and meat (raw and cooked) with this slicer, no lack of power, I've found that it is beneficial to feed raw meat slowly and partially frozen to avoid the flap that tends to form on the trailing edge of the meat you are cutting, an issue all meat slicers tend to have on raw meat. I also like the fact that you can cut up to 3/4" with this slicer (not an option on many slicers), great for cutting bread. Overall very happy with my purchase.

Sev.: Haven't owned a slicer before so dependent on reviews. Not used a lot yet but will do to the job of deli slicing for home use. Little noisy and would have preferred more metal build but in end it is light and not a counter hog size wise. Do have to eyeball thickness when adjusting as marks don't amount to any actual measurements. The stock serrated blade did a good job slicing home made bread and some deli meats. DO have to cut meats to smaller chunks as the carrier isn't super deep. All in all a decent home use item. Can't compare to professional and a decent price for a starter machine.

Suzanne R: I've owned several food slicers over the years. Can't remember the brands. My last one was all plastic and although it did a decent job of slicing roast beef out of the oven, it was a nightmare to wash and clean, it was quite flimsy and would slide around on the work surface as well. The Chef Choice was a toss up between it and the Cuisinart food slicer. I was able to check out the Cuisinart in person at a local hardware store. The reviews on the Chef Choice all seemed to be favourable so I bought it instead and glad I did. I bought the non-serrated blade as others recommended and it does a fine job of slicing paper thin ham. I didn't notice the adjustment dial creeping upward as others have noticed and sliced up an entire ham to package for lunch meats at a substantial savings over the smaller prepacked ham lunch meats. The next task was slicing beef sirloin with the grain for beef jerky. I was too impatient to rechill the meat for any length of time and so we may as well call it far from firm. I did notice that the slicer would periodically grab the meat and start spinning it at the end of the cut. I found that pressing firmly on the food pusher prevents this from happening. The...

V. Evans: I bought this after the last one I had lasted less than a year before the little wheels inside, that were plastic, became all mangled and broken. We only used it about once a month back then so by twelve uses, the warranty was up. I chose this one because the internal workings are metal. So far it is flawless. Smooth and sturdy, well balanced and easy clean. We are using it more often than once a month so we will see how it holds up long term. We have sliced all kinds of things including bread, raw pork and beef roast that are sliced super thin and then dehydrated for dog treats and several types of cheese. It has handled everything with ease. I will update in I years time.

I've wanted a slicer for a couple of years now but could never find one. Everything I looked at seemed to be either cheaply made (home slicers) or too expensive (industrial slicers). In my new locale good deli meat is almost impossible to get and, even if you can find it, is quite expensive; I decided to try another search for a home slicer - Fire up the Amazon Search Engine! Based on the reviews I decided to take a chance on the Chef's Choice 615. After running this machine fairly hard for almost 4 months I feel I can give it a fair and accurate review. I have used the slicer mainly to thin slice roasts, ham, blocks of cheese and even loaves of fresh bread. It's performance has been all that I hoped for and more.
The good:
- Solid construction. Almost all of the machine is metal with a nice finish (ie won't flake paint into your food). The plastic that's on the machine seems to be durable and well made.

Michael J. Cohen: Is there any way to order the nylon part that the blade hold-down screw threads into? I would hate to have to toss the entire thing because of a part that probably only costs a few pennies.
Other than that, I've used this thing to slice meats and bread for almost 6 years and it has done everything I've asked of it. I really don't want to have to throw it away if I don't have to, but in this day and age, I'm happy to have gotten this much out of it.
Please reply, Chef'sChoice. I really don't want to have to throw this away.
