Amazon Customer: My biggest use is cutting a cheese/butter pocket in chicken breasts. Have used it as a boning knife on ham too. Looks like it will last too.

ct1: First impressions:
Length of knife is a bit longer than the usual boning knives
Build quality is pretty great, smooth edges, pretty seamless transition between handle and blade material.
Knife is a bit flexible due to the length of the blade.
Comes fairly sharp. Not razor sharp nor shaving sharp, but about what one would expect for a knife of this price.
If the material is correct, the edge retention should be great. Time will tell.
For the price, honestly, this beats even the typical Chinese knockoffs, etc.

Dan: Essential utility knife for my magnet block. Good quality steel, sharp enough that I haven't had to sharpen in the year that I've owned it. Not as flexible as a filet knife, so keep that in mind. Mine is very rigid.

D. Ramey: Comes sharpened and nicely balanced. Sturdy and well made; looks like it could cost 3x what I paid for it. So pleased with my purchase that I'm gonna order the chef's and paring knife too.

DocHolliday: You can spend a whole lot more. In the end, you'll just be poorer. This knife is sharp. The metal does not rust, showing me that the stainless steel is high quality. I sliced two 25# salmons up with no noticeable change in the sharpness. I ran this through my Chantry edge straightener and back to razor sharp it went.
The handle is tightly riveted, there are no gaps.
Overall, this is impressive. I heartily recommend this knife.

William: I own a $1,000+ set of German Freidr.Dick professional chef knives, which if you have the money are the best you can buy. I needed a couple additional multipurpose boning knives for various jobs where I do not want to use my F.Dick knives, such as cutting without a cutting board directly on my granite counter-tops. I ordered one of these knives, and was soo impressed, I ordered two more. These are German manufactured High-Carbon Knives, manufactured to 4CrMoV15. This knife is a little stiff, so if you are looking for a true fillet knife, I suggest the Flexi-Winco boning knife. This knife ships extremely sharp, and is very easy to resharpen with an automatic sharpener, sharpening steel, and/or sharpening stone. Also, there is no cheap plastic or rubber on this knife. If you didn't know it was under $10, you would think it was a high-to-midgrade professional knife. I HIGHLY recommend this knife to anyone on a budget who wants a quality knife. This is hands down the best dollar-to-value ratio knife you buy. Great Job, WINCO!!!

Lora: Winco products have never failed me, and this is no exception! This is a great knife at a great price. I haven't had to sharpen it ONCE yet. It's great for removing silver skin from meat or slicing up fish. Don't hesitate to buy this knife!
NOTE: to keep knife sharp, always hand-wash. DON'T put it in the dishwasher. I know, I'm lazy too, but it jostles the knife against things and dulls the blade. Also, don't use one of those cheap knife sharpeners where you pull the blade through—either get a sharpening block (easier to use than you'd think), or take it to a professional.
