dees_darlin: My first boning knife so to be clear I have no frame of reference on these types of knives but i'm happy with this purchase. Sharp right out the bag (not box). sundown: Victorinox - what more is there to say. I was introduced to this brand 60 years ago when I served my butchers apprentice and they have never let me down. The knife holds an edge well, is reasonably easy to sharpen and, in the case of the boning knife, flexible enough to get the most out of a cut of meat.

Fred Pietropola: I have the chef knife which is excellent and rated highest by Americas Test Kitchen so I decided to buy the boning knife. It too works extremely well, is as sharp as a surgical scalpel, and very flexible.

R: Griff gut, am Anfang etwas weniger griffig. Kommt mit der Dauer der Nutzung. Die Klinge ist so scharf wie es nur geht, nutze sie aktuell zum Auslösen von Keulen und ganzen frischen Gänsen und jeder Schnitt fühlt sich an, wie der Erste.
