Suzi W.: We have many kinds of knives in our kitchen, including an electric one. This knifes was recommended by America's Test Kitchens and they do extensive testing on equipment, and this is the one they suggested for slicing. What a huge difference it has made using it. The only comment I have about it is presentation of knife as it comes in a flimsy plastic sheath. For the quality of knife it is, I was thinking it would have a nice box.

The Gratin blade ( with indents) makes carving Brisket and smoked Turkey breast a dream.
Recommend for all especially those new to the art.

rascallybear: As we've come to expect from Victorinox, this is one superb long slicing knife. While not a true Granton Edge knife (which are exclusively manufactured by the Granton Knifemakers of Sheffield, England), I'm pleased to see see they have Wm. Grant & Sons scalloped cuts correctly positioned so that the scallops on one side align with solid steel on the opposite side; this being a crucial feature of a design. That being said, this blade is more correctly described as a Kullenschliff knife, as those scalloped cuts don't extend into the Edge of the blade. The rounded blunt tip also defines this as a slicing knife, as versus a more multipurpose carving knife. It's ideal for carving beautifully thin slices of England's famous Roast Beef, where that flat tip (acting like a spatula) excels at helping you get those beautifully thin slices onto the diner's dinnerplates. You'll find this 12" Victorinox Slicer in most professional kitchens and carveries. Although it's not the equivalent of a Samurai sword, it is superbly Fit-for-Purpose.
