I would pay extra for a blade guard so I can stir in my knife drawer and not have any accidental injuries. Worked great to cut up my NY strip Loin. And it worked better than my bigger kitchen knife - I tried both and the boning knife was much easier and sharper for the beef.

Johnnie Renick: Very sharp upon arrival. We used it for processing 26 chickens and it maintained blade sharpness well.

wugubob: For $10, you can't go wrong with how sharp this knife is out of the box. Don't know how long it will keep its sharpness but very impressed. The only downside for me is that I thnk the handle could have been made smaller. It's quite large for a supposed 6" knife.

R. Nicewaner: I was processing 29 chickens and needed a knife that would help do the job quickly and provide me with peace of mind that I wasn't going to cause more pain to them than necessary. Straight out of the packaging this knife was nice and sharp. I only had to sharpen it a couple of times throughout the whole process. I used this knife throughout the entire process, not just the "off with their head" part.

Brian M: Not sharp, the steel is not high enough quality to hold an edge for very long. The handle is comfortable, but to big and balky for the length of the blade. You would be better served with a descent quality 4 or 6 inch fishing fillet knife.

Hank: This is a very good quality, solid, well built, sharp knife for the price, but there are some flaws:
1. The knife is quite heavy for its size
2. The handle is very thick
3. The thickness of the handle make for an uncomfortable grip for me
4. The above 3 flaws combined would make for arm, wrist, hand fatigue
My go to boning knife is a 6" Victorinox Fibrox Pro Curved Semi-Stiff boning knife which I usually use for beef, pork, and lamb butchering. I needed a shorter 5 inch boning knife for chicken and fish but couldn't find a 5" Victorinox Fibrox Pro Curved Semi-Stiff boning knife on amazon so I thought I would give this a try. Even though my 6" Victorinox is longer, the handle is thinner, the grip is more comfortable, and the knife is lighter and feel more balanced in the hand making for smoother faster cuts.
I will say this knife is a great value for the price, is razor sharp and would make an excellent starter knife for a home cook or beginner in the kitchen, but someone with more cooking/butchering experience will probably require something lighter that provides a more comfortable grip. I will be returning this to look for something that provides a...
