Lisa Kennedy-Reid: My son-in-law and daughter are vegan and loved this book.

BJR: Lots of good recipes. I’m happy with this book and feel like I will use it often.

Sofie L'Eau: I was very disappointed with this book. I was looking for something inspirational but half the book is filled with salad recipes that don't even go in the slowcooker or with soup. A lot of chillies as well, that are just small variations on the same recipe. If you are an absolute beginner of a cook and have no clue at all what to put in a slowcooker or just a casserole, I guess this may work but for a book that says it's about vegan slow cooker recipes, it's not good enough.

Amazon Customer: Has some very good vegan slow cooker recipes. Would recommend.

Sara-Jack-Sara: Exactly what i wanted. Simple, delicious & easy to follow one-pot recipes. My only criticism is that it could do with a few more photos, but I would definitly recommend this book!

Helen C.: I like many things about this cook book.... easy to follow, well organized, nice photos, uses normal staple ingredients..... but.... the recipes are somewhat... hmm.... similar.....lots of curried this and that... every recipe ( just about) asks for ginger and garlic and canned tomatoes....... would have loved a greater variety in flavours. But for new crock pot users... very good indeed.

Amazon Customer Sue: This book delivers what its name implies: Super Easy Vegan slow cooker recipes. I'm cooking for a man who's had an esophagectomy due to cancer, I don't have a lot of time to spend in the kitchen, and need supper to be ready and available between ~5p - ~8p depending on when he feels ready to eat. The slow cooker makes this easy cuz it keeps dinner warm for several hours on the low setting without ruining the meal. I like the chapter that starts with a basic recipe, like lentil soup, and follows it with 2 different ways to build off of it. The book has tomato-based, coconut milk based, and veggie broth based soup/stew recipes that have all been hits so far! Creative use of spices adds variety. An added benefit is that the yummy aroma of the food cooking works as an appetite enhancer! And to be clear, I just chop and dump the veggies in the pot, no fancy prep work. If you're looking for unique, imaginative, gourmet cuisine, this isn't your book. If you want a collection of solid, tasty, easy and healthy recipes using pantry staples and recognizable spices, this book delivers. I couldn't be happier with it!

Jessica Jones: So, I was excited by the reviews to use this book. I am not vegan myself, but I wanted to help my family to eat more vegetables more frequently to be healthier. This book had a higher rating than the vegetarian slow cooker book, so I went for it. Mostly, it's pretty great.

Pros:
1.) The recipes are well-written and easy to understand.
2.) The recipes give great clarity into why you are doing what you're doing.
3.) There is a beautiful breakdown to help you know if something is gluten-free, nut-free, soy-free, etc.
4.) There are options to make your own broths, and a few different kinds, or options given of what to buy from the store. Immensely helpful for those who love to cook and craft, but don't always have free time.
5.) It includes nutrition information with each recipe, so great if you're trying to track that!
6.) The formatting is easy on the eyes and consistent throughout. Nicely done.

Cons:
1.) A few of the recipes are bland in spite of their list of spices. I couldn't tell two of the recipes apart taste-wise, even though they shared only two of the same ingredients. I'm considered highly sensitive by everyone who knows me, so this was a...

Naomi: First of all, I like this cookbook. It checks the most important things for me: the meals are very tasty (as least everything I have done so far), prep time is at most 20 minutes, most ingredients are very affordable, one batch is a good serving size (I normally have one to two dinner and one to two lunches out of one batch).

My only problem(s) with this cookbook is something that is almost always a problem with american cookbooks: all ingredients measurements are given in cups or ounces. It would be great if for a European version, they could translate these into grams/ kilograms or any other kind of weight measurement. Now I have to google for every recipe how much a cup of a certain ingredient is weighing. Again, this problem is not specific for this cookbook, but from my experience almost all american cookbooks that haven't adapted to the european measurements. So if this does not bother you in general, forget I said anything :)
One little extra that european (or at least dutch) readers should be aware of: not all ingredients are available here, but from my perspective easily replacable. The cookbook uses a lot of frozen ingredients that I have never seen a frozen...

SeleneSelene: Ok so it's been 3 months since I bought this book and I haven't actually used it as a recipe book yet but the cover is really pretty and leaving the book out in plain sight has inspired me to use my slow cooker more often than I used any punctuation in this run-on sentence.

I think my favorite recipe so far was the Lavender/Lemon Love soup that I made for my partner's birthday.

I secretly call it anti-SAD soup because all 3 L's help with depression/ anxiety/ Seasonally Affected Disorder and that makes the world a little happier.

^ that's no longer a secret

The soup is concocted such:
Start by combining equal parts purple sweet potatoes and parsnips in a slow cooker with a base of vegan legume broth (for protein) and then add your choices of:

Lemon (I used dried lemon peel but you could grate fresh peel or use a food-safe lemon oil)
Lavender (I used food-safe essential oil but you could also use dried, ground lavender) and
Love (I used equal parts romantic and self-reflective love but you could also use parental love or even resentful spousal love just so long as you don't use the Love that the FDA rescinded from Love Crunch's ingredient...
