JEH: What a wonderful cookbook. Ashley is a great writer and every single recipe contains some kind of special insight. The nutrition level of the recipes are higher than any other cookbook I have and for the most part these recipes are quite simple to make. Here's what I've made so far and I will update as I make more:
1. Blueberry, Banana & Chia Muffins: So easy and they are the perfect muffin for breakfast or for afternoon coffee or tea. Wrap them individually in saran wrap and keep them in the freezer to make them last.
2. Warming Carrot & Tomato Soup: Another easy dish but when I want tomato soup I think of the childhood favorite and this recipe contains cumin, cinnamon, fresh ginger and even though it is delicious, I would make it next time without those spices. However, it makes quite a base for a vegan chili so it did not go to waste!
3. Bacon-ish Bits: These are worth the price of admission. They go well sprinkled on soups, salads and eating out of hand (although beware you can't eat just one).

CDL: I have way more plant-based cookbooks than I should, and almost passed on this one, but boy am, I glad I didn’t! Although I am not gluten-free, I do strive to keep a whole food plant-based diet. This little cookbook came into my life at a time when I was having a serious, cooking slump, and, so far in the less than one month that I’ve had it I have made over half the recipes and my husband and I have made very few adjustments to these recipes. And that is saying a lot, as we almost always do “recipe rescue“ on many of the plant-based recipes we try. The author story is amazing, and if that’s not enough, the delicious and easy to prepare recipes will hook you!

Mark H: The recipes in this book are wonderful. Thus far, each recipe I have cooked would score a 15 out of 10 (with 10 being the best taste ever). The ingredients are easy to find and the instructions/directions are understandable for a beginner cook. I would highly recommend this recipe book.

B.J.: I like this cookbook but it is not easy for me to cook from. I am diabetic. There is no nutritional information for the recipes. I have to cover carbohydrates with insulin and that information is missing in this book. I also wish that she had suggested substitutions for some of the ingredients that people might be allergic to. I learned a lot from reading this book and I have modified some of the recipes for myself. Like so many of the “healthy” cookbooks the lack of nutritional info. for the recipes makes it difficult to use for me. That is why only 4 stars.

MR DAVID PLUMMER: Amazing health food cookbook and unrivalled oil free vegan recipes- I've been eating at least one recipe from this book or her blog everyday since November. Ashley is extremely innovative with her recipes, the ingredients are very accessible. Can't stop eating the brownies- they're amazing!
