Precise DisarrayPrecise Disarray: I've been using coconut sugar on and off for about a decade. Lower glycemic level which means that it doesn't cause blood sugar to spike as quickly or as high as other sugars. Also has naturally occurring vitamins and minerals. There is NO coconut taste. It is really quite close to brown sugar tasting, but drier like white sugar granules. I think that is what makes it so easy to swap in- there isn't a big difference in taste. Not using something that is going to make anything taste weird. Just tastes like sugar, but better in so many ways.

I find it works with anything, as 1:1 swap for refined white sugar. I don't sweeten my coffee but rarely, but it works great in coffee, over hot oatmeal, etc. Can be a little trickier in baking but its workable (can be use as brown sugar or white sugar replacement). I usually do a combo. I always keep some coconut sugar on hand for guests for their coffee.

I like the smaller bags. I tend to buy 1 lb bags rather than larger. I either keep in in the bag, or I pour into a jar. Any clumping over time will easily break apart. It doesn't get hard like brown sugar can get.

Andy & Ari: I am a pretty health conscious woman, but I live in a household which has two other people who love and crave their sugary badness as if it were some form of oxygen. And because I love them, and their happiness does matter to me, I will sometimes bake something that doesn't really meet my personal health and wellness standards. But there's just only so much bad I can bring myself to be in the kitchen.

So, for recipes that call for brown sugar...I sub it out with this stuff. It has a similar enough taste, but...the glycemic index is dramatically lower. And it also does have some trace vitamins and minerals in it (vitamin c, iron, copper, zinc, thiamin)...they are trace amounts, so that's not a huge factor in my decision, but it definitely is a benefit traditional table sugar doesn't have.

The reason I didn't give it 5 stars is that some of the bags with this product don't reseal well or easily, and we have a subscription for this and have been getting it through Amazon for quite some time now, so I've seen several bags of it come through my house, enough to know it has happened more then once, and it does bother me, because then I have to transfer it to a container of...

WacoPaco: Let me start off by saying that coconut sugar may not be for you, or that you may need to learn to like it. My usage of coconut sugar is primarily for my morning coffee.

Coconut sugar is derived from evaporating the water away from the nectar of the coconut palm flower. It is not refined like traditional table sugar, and as a result, has slightly inconsistent granule size and the occasional (harmless) spec or two of material in it that comes along with it. Ignore the reviews that say these are bugs.

As a health-oriented consumer, a father, and someone who likes to support sustainable agriculture, I can stand behind coconut sugar. From a health standpoint, coconut sugar has a low Glycemic Index (35) that makes it suitable for diabetics. This means that your body can easily control the rate at which your cells burns this sugar for fuel, which is important because it prevents the "sugar spike" and subsequent "sugar crash" later. From a vantage point of a consumer who wants to support healthy, sustainable "green" industries, coconut sugar is a good product to stand behind.
