Bob in Phoenix: As good as any cast iron skillet. As sold it is poorly seasoned. You will need to season it yourself again for best results. Coat with a thin film of oil. Place in oven or grille with the temperature set as high as it will go. Bake until it stops smoking. Allow to cool. Repeat. It doesn't matter what kind of oil you use. Any will work (canola, PAM, corn). Your grandmother's was probably seasoned with lard or Crisco. The oil will polymerize and form an almost non-stick film on the cast iron. Just don't use an oil with any organic solids, ex. Butter. If you cook acid foods in cast iron you will need to re-season, the acid will breakdown the film.

Amazon Customer: Many years ago, the late 60's, I purchased two cast iron pans, both had machined inside bottoms and sides.
I searched for months but could not find any pans on the market that had smooth inside surfaces. This pan has a rough surface both inside and out. Added another layer of seasoning last night and grilled a ham and cheeze sandwich to test it out. It was OK but I would have preferred a smooth bottom.

ricrac: Years ago I had a small cast iron fry pan and used it all the time. Not sure what happened to it but for several yrs now I felt I need a single serv--small cast iron fry pan again and finally ordered one. Then.. I remembered how hot the handle could get so I ordered a leather handle cover. I think it's the perfect solution for hot handles. When it arrived It seemed to me this small cast iron fry pan is a little smaller than my old one. which was the perfect size for two eggs or a grilled cheese. I put the leather handle cover on it and put them both in the cupboard. Funny thing is, I'm so use to not having one, I forget it's there and haven't used it yet. Oh welll... when I do I'm sure I'll love it.

Peggy: I make a healthy chocolate chip cookie that can be cut into 6 to 8 wedges for my husband. I was using my mother's old pan, which worked perfectly. I decided to buy a new pan for my daughter, because she and her family also love the cookie.

I didn't buy a Lodge pan, because I read that the surface was very bumpy. My old pan was as smooth as silk, and so easy to clean. I thought I would try the cookie in the new pan before I gave it to my daughter, because it is also very bumpy, unfortunately. As I figured, the cookie stuck to the pan a little, though I seasoned it before use. When cleaning, the paper towel left residue in the pan, because of the bumps, and also when I tried to spread oil around the interior. Therefore, I sadly gave my daughter the old pan, and will continue to deal with the bumpy surface myself. Disappointed!

Raceral: I ordered this pan mainly because I wanted to see what kind of product Victoria produced.
Shipping was prompt and I liked the look of it as soon as it was unpacked. The pre-seasoning finish is slightly rough, but smoother than my Lodge 8 inch pan.I washed it out and then put some water in it to see if the pour spouts really did work without dribbling down the side of the pan.
Not one drop of water went on the out side of the pan, the spouts do exactly as advertised, very pleased.
I always redo a seasoning on any new pan and also did with this one.
Breakfast morning I asked my wife what she want might want for breakfast and this day she replied just oatmeal.
So that was my opportunity to try the pan for a personalized breakfast skillet, which had the usual cowboy stuff, eggs bacon, bit of ham, hash and cheddar cheese etc.cooked over a gas burner and then into in the oven for 10 minutes.
Used a wooden spoon to remove it, came out clean and easy, no sticking whatsoever.
A little hot water and it was clean like new, little warm oil wipe and I am good to go for next time.
My wife admired my breakfast so much so that I have now ordered a second pan.
