Patricia Downey: I bought an instant pot almost a year ago, along with a cookbook, but I found both intimidating. I used my instant pot for a couple of soup recipes and lentil dishes, and that was about it. I am so glad I bought this cookbook! I have had it for a couple of weeks only, and I have already made about a dozen recipes. All have turned out very well. For lunch, I even cooked pasta in my instant pot -- and it was ready in 5 minutes! As the saying goes, Do what you fear and you will stop being afraid! That certainly applies to using an instant pot. All it takes is the right cookbook!

Angelsoft: I have for years held the mistaken understanding that pressure cookers are for folk who cook meat. I now discover, thanks at least partly to this book, that my plant-based diet can also be enhanced, if I by being made more easy to prepare, by the use of a multipurpose pressure cooker. This has been a surprise bonus addition to my kitchen.

J. Stevenson: This is a fantastic book. As a vegan looking for a book with common sense info both on the Instant Pot usage, plus vegan recipes in an Instant Pot this cookbook gets a lot of use in my house. From the dedication at the beginning to a nice intro to the appliance, plus FAQs and tips, and then to the whole foods based recipes this book/cookbook is valuable to me. I love the organization in the recipes that show basics like prep & cook times, but also give the IP cooker settings and release type/times. But also really useful to me as someone who requires gluten-free, I appreciate the sub-headings on each recipe that note things like "gluten-free", "nut-free", etc. This makes browsing recipes much easier. But note also she indexed a full list of the gluten-recipes, which is also helpful. Overall this cookbook is a staple in my kitchen and make cooking easier. Thanks.

Matt: I finally found a vegan instant pot recipe book that has simple ingredients and all the recipes look/sound delicious. Straight forward and able to make many recipes right now - no running to the store for bislewood or corhashindom. Sure, I made up those last two ingredients - but you get the point: You have what you need at home for the most part.

Catherine A. Evans: Despite the images on the item page this book has only 6 photos of recipes, and these are 'header' recipes at the start of the chapter. I don't understand cook books like this, you wouldn't have a sewing, decorating or knitting book that didn't show you what the end results look like! Lots of good instructions on how to use the Instant Pot - I adore mine - and clearly laid out. I like the veggie noodle soup, although noodles are pasta in UK, the red beans and rice is very good. Some items may be difficult to source here - Mexican oregano, Cara Cara orange balsamic vinegar etc, but there's always online.

Raven Reads: I found several recipes I am excited to try as well as some good, basic information about using the Instant Pot. The book is well written, easy to follow and provides clear instructions as well as a recommended list of staples. I was pleased to learn that many of the recipes call for little of no oil.

Emily Kathleen Reuter: I have to say of the three vegan instant pot cookbooks available out there, this one so far has been a perfect success with every single recipe. There is another vegan pressure cooker cookbook on Amazon with the blue cover in hardback where I made 4 recipes and all of them got burn notices. So far from this one I made a simple tomato basil pasta which was absolutely delicious, where I added in once completed some baby spinach leaves and a splash of red wine vinegar. I did the red beans and rice which were delicious and perfect, and also the potato leek soup which was fantastic. All came out perfectly with no issues we can’t wait to try more recipes. Doesn’t matter that this book doesn’t have photos. If you are an experienced cook and understand vegan cuisine, you can get a good visual on the dish you are creating in your imagination. And let’s face it, sometimes pressure cooking doesn’t allow the most prettiest foods. The flavor, texture, nutrition that matters. highly recommended for vegans, vegetarians, or anybody looking for a healthier eating plan.

Mel: I bought this book at the same time as buying my first Instant Pot (or similar), purely because I’d always been intimidated by the concept of the latter. This book gave me the confidence & inspiration to go for it! And I’m so glad I did.
It’s welcoming, practical, imaginative, well-written, and potentially life-changing!
There’s way too much processed/junk food out there, and this book flies the flag for an *attainable* whole-food, plant-based diet, which is so important for optimal health, of course.
On that note, highly recommend reading ‘Whole: rethinking the science of nutrition’ by Howard Jacobson and T. Colin Campbell.
Anyway, thank you Barb Musick - your book is excellent! And I especially appreciated your dedication.

Tara: This is one of the better cookbooks I own. I'm not a vegan (or even a vegetarian) but I wanted to start cooking more plant based things and eating healthier in general. I work 9 hour a day and don't have a lot of energy to cook when I get home so something easy and quick was important. This cookbook has all that and more. Barb Musick has such an incredible way of making you feel like you are sitting in her kitchen chatting as she tells you about the recipes. She has warm reminiscence, funny quips, and really helpful tips and information. And the bonus - the recipes are GREAT! I am such a fan of this cookbook and plan to give it as Christmas presents this year. I've also heard she is working on another cookbook (desserts?) which is soon to be released and which I will eagerly buy when it is available.
