Deborah Furniss: This book provides excellent vegetarian recipes that will satisfy even the most choosy eaters. Along with some facts behind the science. Recipes are well presented, practical, and easy to follow.

Paul Boswell: This is how you write a cook book. All of the instructions on one page with an appetizing photo of the finished dish on the other. Lots of great ideas here too. I can't give it five stars because the title is a bit misleading. While vegetables are the main ingredient, don't be mis-led into thinking this is a vegetarian cookbook. There's lots of diary products in these dishes, including eggs. However, there is a section at the end of the book that offers alternatives to these animal-based products. Since the main challenge in a plant-based (vegetable) diet is how to make bland and bitter vegetables taste good, I was hoping for more ideas on fruits, sauces or salt-free spices that would mask the taste. Overall, a good addition to a basic cooking library.

Sandra Suarez: Hermosa fotografía, las recetas son sencillas, bien explicadas, y a falta de ingredientes, las sustituciones son fáciles. Un gran libro para vegetarianos principiantes que quieren comer mas que ensaladas y pasta; un gran libro para omnis que quieren incorporar mas variedad de frutas y verduras.
