As a veteran homebrewer, I've dabbled in a myriad of yeasts and techniques over the years. However, my journey took a remarkable turn when I discovered Red Star 9804 Dady Distillers Active Dry Yeast, particularly in the crafting of my signature blueberry wine.
Mastering the Art of Brewing
My adventure began with a 6-gallon barrel as my canvas. To this, I added 2 kilograms of succulent blueberries, 4 kilograms of granulated sugar, 6 grams of diamonium phosphate, and the star of the show—12 grams of Red Star 9804 Dady yeast. The initial phase of fermentation was conducted in an unsealed environment for 48 hours, followed by a more controlled 28-day fermentation period under an airlock.
The Clarification Stage
Post-fermentation, I employed a siphoning technique to separate the liquid from the sediment, allowing it to further settle for an additional 28 days. Following this, I introduced a clearing agent, as recommended, and patiently waited for another 5 days.
The Revelation
Upon the completion of the clearing stage, I utilized a refractometer to gauge the alcohol content. To my sheer delight, it had skyrocketed to an astounding 21.3%...

john oswald: not that i would ever consider fermenting anything and then distilling here in Canada but i have heard this is the best to use....wink wink...fast fermentation and high abv...the guy i know that uses this says its the only one he uses....no bad farty flavors like turbo yeast

Tried to hydrate some yeast to test it out, nothing happened so I mixed up some warm sugar water with some yeast nutrient and DAP added. Poured it into 3 bowls and added this DADY to one, turbo yeast to another and bread yeast to the third and stirred them. The turbo took right off with the bread yeast following, but slower. The DADY didn't seem to be doing anything.
30 min later, the turbo & bread yeast have sunk to the bottom of the bowl and some foam forming on the surface. Some motion in the bowls. The water has become cloudy as well.
The DADY yeast is 90% still floating on the top and very slight cloudiness. No detectable foam or bubbles. Very different to the other yeasts. It seems to be a dud!
NOTE: No expiry or mfg date on the package anywhere. On a yeast? Yeasts need to be fresh as they need to be still active or its worse than useless. Would you buy eggs online with no expiry date?
Went to return it - sorry, no returns on this product! What a disappointment :(
On the day after receiving it too. No way to contact the vendor that i could find unfortunately.

The only thing I know of that works close to as fast as this is Brewsy. This chews through table sugar or honey like nothing, and then very quickly falls out of suspension once all of the sugar is spent. Exactly what you want for this kind of yeast. Plus, it's extremely inexpensive and I'm likely to run out of interest in this hobby before I need to buy another bag of DADY.
I would have preferred a resealable bag but that's the only strike against this stuff.

John Rigdon: Made homemade wine using bread yeast many times and ferment is rather slow starting and lasts for near 3 weeks . Activated this yeast in 103 degree water with 1 teaspoon of suger and only 1 teaspoon of yeast and let stand till I smelt alcohol which took about 8 minutes before adding to 5 gallons of wert. Within 20 minutes airlock was burping. Before I went to bed airlock was burping every half second. Great fast acting yeast . I will have to update review with flavor and length of fermentation after batch is done.

EP: So as a bread baking novice I had no idea about the different types of yeast out there and well I really needed yeast to make bread and bought this yeast and I was pleasantly surprised at how lovely my first ever bread turned out! Granted the $14 price tag was not the greatest but I’m sure this one pound bag will last a while! I really recommend for breads as my loaf came out better then the one in the actual recipe book! Two thumbs waaay up!
