Lallemand Instaferm Instant Dry Yeast: A Quick and Effective Leavening Agent for Baking

Lee A.Lee Anne from Michigan: I bake my own bread, so I go through yeast rapidly. Therefore, I usually purchase a 1 pound, or a 2 pound package. My red star yeast seem to be less and less active. I really thought that one should’ve lasted longer in the freezer. So I decided to give this yeast a try. I keep my yeast in a storage bag in the freezer. So far, so good. I would not hesitate to use this yeast in the future.

Old Feller: Rises fast and makes good breads. Purchased May23, 2020 during pandemic. It lasted until today, May26, 2023. I kept it in small glass jars in the freezer the whole time. It was just as energetic as the day I got it. I purchased another bag today. It seems pricey but honestly it was only $5 more than it was 3 years ago. Not terrible. I tried the SAF as it was half the price but was not impressed with the little to no activity. I'm sticking with Instaferm.

WAYNE F DELEERSNYDER: I use this yeast all the time to make pizza. I'm sure I could make other things like bread, rolls, etc., but Homemade Pizza Friday's have become a tradition in the house since the whole pandemic took place. It was a bit expensive at $22.99 during the depths of the pandemic, but it dropped to $10.99. My only qualm would be that I did once receive an order where the yeast was going to expire a month later. Be on the look out for that. Amazon was good about it though and refunded me.

Louise F.: Bought this yeast to make bread home in my bread machine. Most recipes had called for dry active yeast or bread machine yeast but I wasn't getting good results with dry active and so called bread machine yeast was getting expensive so gave instant yeast packages a try and got great results each time. Looked on Amazon for bigger quantity, checked this one out, ordered it, received it within couple days and been using it since with great results. Just put it in a glass mason jar once opened and keep it in the fridge. Like the product and will be ordering it again in the future before I run out for sure. Easy to use, either measure with a measuring spoon or by weight either works.

ShimmeronShimmeron: I did a lot of yeast bread baking in my younger years, and retirement has allowed me to resume my love of baking. I had only used regular active dry yeast packets previously, but the virus has made it difficult to find any kind of yeast for baking locally! I found this yeast on Amazon and after a bit of research decided to give it a try, and I’m so glad that I did! My first foray back into baking was with bagels and they turned out so yummy! My research found that “Instant yeast requires approximately a 25% reduction from the amount of active dry called for, and this worked for me! I think I would have had a bit too much yeast flavor without the reduction. Although this instant yeast does not call for proofing, I did so anyway: it seemed a little less fizzy than regular active, but worked great regardless! The price for the amount of yeast is great and storing in the fridge or freezer should provide a long shelf life and lots of breads and donuts:)
