E. Powell: Gas grills are convenient but they do have their critics, mainly when it comes to adding flavor. I started experimenting with mesquite chips in a smoker box earlier this summer and have now begun to branch out to other types of wood chips to achieve different flavor profiles. Hickory has a bold flavor that really enhances pork or maybe sausages but can potentially be overpowering to other meats like chicken or fish, which pair better with fruit woods like apple or cherry. While some people suggest soaking the chips in water for a few minutes prior to use, I get better results using them dry. That said, I do put a pan of water on the grill's upper shelf to create a moister environment, which helps keep the meat from drying out. On average, I get about 25-30 minutes of good smoke with the smoker box if I keep the grill on a low temperature setting. Cooking takes a little longer, it is still much quicker than a regular smoker, and while the smoke flavor is not as intense, it is still very much worth the effort and brings a new flavor dimension to the gas grill experience.

Kimberly Nikanowicz: We use these to smoke meats in our gas grill. We soak them for an hour, put them in an aluminum pan, put the filled pan on an end burner, light that burner, put the meat on the unlit parts of the grill, close the lid and wait the appropriate amount of time. Works darned good. Doesn't take much at all for our foods to get nice and smokey!

When we had issues getting them to smoke up, we just mixed in more dry chips. These Hickory chips gave a wee bit more issues with getting them going than did the other 3 flavors/types we bought. But once they were lit up, they were great.
Issues with them smoking too fast/much were dealt with by adding some more wet chips to the pan.

Will buy again if they are cheaper than our local butcher shop sells hickory chips ($2.49 a bag for non-Oklahoma Joe's chips). Still, considering these are Oklahoma Joe's brand chips, the price difference is reasonable and these are worth it.

Dave: I've been using Camerons Hickory chips and ran out with less than a week until my next BBQ. Their chips weren't available on Prime then, but these were, so I ordered these to try them out.

When you open the Camerons bag, it instantly smells like hickory. The bag I of Oklahoma Joe's I used didn't smell like anything. Tossing a healthy amount of chips into my smoke vault barely resulted in any smoke at all. Later in the smoke, I decided to do a mix of this wood with Cameron's Oak, which produced a heavier smoke. The final result was that the first round barely had a smoke ring or flavor, and the 2nd batch had an all Oak, but half the flavor as usual, result.

I play drums and use hickory 5A sticks, but it's obviously very different than the hickory I use in my smoker. These chips were closer to my drum sticks, dry and scentless, than to something I use to flavor meat.
