Warning, if you are unpracticed, get someone skilled to sharpen this one, it's flexible, thus, more difficult to get 'consistent' edge. it will take time, so use it well.

This knife is crazy sharp. I originally bought it to cut brisket, but I have found that it is better at slicing and filleting. I cut thin slices of jerky meat with it, and I don't have to get the meat cold like a lot of experts say to get thin slices. I can cut paper thin with this blade. Fantastic knife.
