urs7288: This can really get you started. Basic techniques explained. Even though many recipes do not start "from scratch", there was enough information for me to venture into my own trail food, as the basics are well explained.
I am particularly fond of his Ratatouille and the refried beans techniques. I personally developed three different dehidrated beans recipes starting with Glen Mc Allisters techniques and they are my favorites on the trail, as beans rehydrate quickly and can be prepared "freezer bag style".
Also the chicken recipe was well appreciated and adapted. To reduce the work to prepare it, we replaced the chicken breast with ground turkey and this gives great tasting addition to rice for example.

Update- emailed chefglenn about the misprint and received a very prompt sincere apology with reasonable solutions. 5 stars for both their customer service and the the recipes within the book!!! 1 star for amazons print job.

funFifty: Excellent book; simple clear recipes and information on how to use them on the trail. Really does give meal in a bag information. Also includes excellent information on drying all types of food.

Noatak Girl: We purchased a dehydrator solely for camping food. For years we had purchased dehydrated meals, but the quality isn't great. We were short of time and I bought the excalibur as recommended by Chef Glenn. This book is all you need to start on your dehydrating journey. Much of the information is available online at various places, but I like the convenient all in one place format. Glenn recommends starting well in advance of a trip, but I didn't know that and found myself running the dehydrator 24 hours a day for about a week plus dehydrating some food in my oven. (I wasn't sure how much we needed and went a little overboard for our first trip). Long story short, once you start dehydrating your own camping meals, you will never go back. We've been home a week and still eating some dehydrated meals to finish up. The food has been dehydrated for 30 or more days now, we did not vacuum seal (did not have time to invest in that for this trip) and is still in great shape. I can see eating more of this food even when car camping with a cooler as it makes cooking fast and easier. Jo-ann van der Westhuizen: Found Chef Glenn McAllister on the internet in my search for dehydrating foods for my backpacking trip. As a vegan it can be difficult to find "rat-packs". His book is amazingly easy to follow and he has made a real effort to write a book that is easy to understand. Has everything you need from which dehydrator to buy to some amazing recipes which I am dying to try out. Yes, it refers to some American branded foods items like instant cheese powder, but its not something you cannot find in the UK. All in all a very good book.

mrs.jones55: I purchased this book a month before my first backpacking trip. My biggest concern about backpacking was having to eat unhealthy, over- processed preservative laden backpacking food. Even the organic brand I found had maltodextrin in it. After reading Chef Glenn's book and understanding how easy (and FUN) it would be to make my own, I purchased an Excaliber 9-tray dehydrator, some silicone tray liners (for making 'barks'), healthy ingredients, and went to work. What I loved about this book was the information and tips he provided to convert your own favorite recipes into trail meals. An example of this would be dehydrating chicken meat. The rehydrated results are tough and chewy, but using canned chicken, because it has been pressure-cooked works great. I have to say, I am not a fan of canned anything, but when I found canned cage-free organic chicken, so I experimented with my favorite white bean chili (my recipe). The results were awesome. Even better, I made the chili and then dehydrated it as a 'bark' (instead of dehydrating each ingredient separately.)

Kenjaja: I bought this book to help with a through hike of over 510 miles/820km . I needed to backpack food for those days when nothing else would be available. The author explains how to dehydrate food at home and then how to use it to prepare meals on the trail. The instructions are all clear, concise and complete and there are many other excellent aspects to the book. The recipes I have tried have all been very tasty but also are readily modified if you want to change some ingredients to suit your own taste. Once prepared at home the dehydrated meals are very quick and easy to rehydrate to hot tasty meals when on the trail. Everyone will want different sizes and these should be larger when hiking than when leading a sedentary lifestyle. For me the portion sizes were spot on - I'm an average sized British bloke with a good appetite.
The ease and speed of preparing these meals on the trail means you can stop and eat almost anywhere and any time you want. The top of a hill with a fantastic view could be great for dinner but might be exposed & less than ideal for camping. So cook and eat your meal there and enjoy the view then move off to a sheltered spot to camp. The short...

Jeannie Bean: I’m enjoying this book. I’m relatively new to backpacking and bought several books with the intention of making homemade backpacking recipes to take with me. This book has an incredible variety of foods.
The only thing that I haven’t decided is a negative or a positive is the fact that none of these foods are freezer bag meals - per the recipe instructions you can’t just add boiling water. The author intends for you to put the food in a pot, boil it for a period of time, then eat.
This is great because you won’t be lugging dirty wet plastic bags with you, on the flip side, you have to have a pot you can cook food in - so the quick boil stove setups intended just to boil water won’t be as useful if that is what you own.
