Jason E: I love these because I can put them on top of my wood cutting board which affords me the ability to cut different items (meat, chicken or fish, fruits or vegetables) without having to wash the wood board each time. It also keeps harmful bacteria off the wood surface. I can also just use these mats directly on my counter for lighter cutting activities.
