SakuraSakura: I haven’t really tried the recipes yet. But I’m marking the ones I want to use. First what I love that the calories and nutrition facts are added! Why doesn’t cook books add this to begin with!!!? But this has it and it’s so helpful!
I gave it 3 stars since I haven’t tried the recipes yet aside for the smoothie recipe, but that’s always a simple follow. I did cut everything in half since it was way too much for me and my spouse. I do find the recipes to be a bit basic, but I’m ok with that. There are a lot of nice simple salad bowls.
Now I did come across a recipe that is the crispy teriyaki tofu vermicelli bowl, seems good, however when I looked at the calories per serving it was 985 and it’s serves 3 !!!! Crazy! But then I began to wonder why so much noodles. When I looked up the vermicelli noodles oz per package it’s about 8oz not 14. You would need 2 packages of noodles, I think. Unless it’s not rice noodles? So I’m not sure if that was a typo or on purpose. Well anyway I can make this recipe way less calories.
The recipes does use oil but I think there are a lot of recipes that gives you some options to omit that and there are some...

LF: I’ve been vegetarian for a long time and so far, I LOVE this cookbook. Very easy recipes to follow but what I really love is that the ingredients are relatively easy to get at any store. Sometimes with vegan recipes it can be hard to track down the more specialty ingredients. Everything we’ve tried so far has been delicious and quick!

Forgotten middle child: The photo online appears to show (at least to me), a spiral bound book which I thought would lie flat while following the recipe. It does not. I am sure the recipes are "healthy" though many contain full fat coconut milk, but I was expecting more vegetable recipes that don't have tofu, seitan, tempeh and the like. There didn't seem to be anything really new or recipes I haven't seen before.
