CosmoCosmo: This agar comes as a fine powder and is very good if used correctly. It's very 'strong' but because of that has a low solubility. It's not a problem if you are making a gel with low concentration of agar however for meringue type of processes (zefir) which requires a high agar concentration, a correct approach is very important or you will fail. I estimate that highest concentration of this agar that can be achieved in hot water is about 1.5% (that is about 150 ml of water per 1 g of the agar). Sugar and Light Corn Syrup increase agar solubility without significant effect on its setting. Most of sugar replacements also increase solubility but interfere with hydrogen bond formation so your agar will likely not to set at all. DO NOT DUMP ALL AGAR IN WATER AT ONCE! It may lead to a clump which will be very difficult to dissolve. Bring water to a boil and start adding agar by very small portions with constant stirring. When almost all agar is in water, you can add light corn syrup or sugar. I was able to dissolve 4.4 g of the agar in 150 ml of water with sugar, and further evaporate the syrup to a desired concentration. This agar is so 'strong' that I had to reduce...

melstero: I gave up dairy to go whole food plant based. I really missed cheese! I use this in a vegan mozzarella cheese and it turns out really well. I had never used agar agar before, but I certainly have no complaints about this product!

Beverly T. LyndsBeverly T. Lynds: I tried it out because I am serving a vegan luncheon. This rose tomato aspic was made with 1/2 tsp of agar agar with 3/4 cup of Trader Joe's low sodium garden patch juice - first dissolving the agar agar in 1/4 of it and then adding the rest and cooking it on a low boil for 2 minutes. I then added 1/4 c of almond milk - it could actually use even less of the agar agar - sets quite well.
