So if you are new you can get started right away with what you have at home. If you have been at it for awhile you'll find some clever problem solutions and also tips to help you improve. La presentación del libro es excelente, con fotografías impresionantes que hacen que la boca se te haga agua. El libro comienza con una breve historia de la pizza y luego se adentra en los fundamentos de la masa, la salsa y los ingredientes. La sección sobre masa es especialmente detallada y esencial para cualquier persona que quiera hacer una pizza perfecta. Incluye información sobre tipos de harina, levadura, fermentación y amasado, y el autor ofrece consejos útiles sobre cómo obtener la textura perfecta de la masa. (ideal para mí, que siempre me había costado pillarle el punto a la realización de la masa)

Jason Humphries: After years of perfecting home-oven neopolitan pizzas courtesy of Ken Forkish's excellent "Elements of Pizza", I wanted to switch things up and try different techniques, recipes and flours so bought Vetri's "Mastering Pizza". Vetri is certainly very passionate and enthusiastic about his craft and that makes the book easy to devour :-) There's plenty of different dough recipes for all different types of pizza - even dessert ones, and different types of ovens (home, grill, wood etc). One thing I loved was the suggestion of buying a small stone mill and milling your own whole wheat flour at home to add to the dough recipes for amazing extra flavor.
Since the main reason for buying this was variations of Neopolitan pizza, the two recipes I've tried were the "Naples Dough" and the "Old School Naples Dough" - both at 70% hydration. These are certainly very different from the ones I've had so much success with from Forkish's book so I was excited to try them. I was really intrigued by the long (4-day) fermentation and hold process of the Naples Dough. I'm on the fence about the King Arthur bread flour. It has a nice flavor but isn't as elastic as the 00 Blue flour Forkish calls...

Michael hale: I was expecting a homemade pizza recipe book but instead got fancy schmancy restaurant quality pizza book and it wasn't that easy to understand. However i'll keep reading it and hopefully i'll get it one day.
