JudyJudy: This picture is my first attempt at making gumbo. We were introduced to File during a cooking class in New Orleans. It adds a little more depth to the flavor. Once I got home to NC, I realized it is not that easy to find. This is perfect, and I needed the Creole seasoning anyway. The expiration dates are about 2 years out, so pretty fresh. I think some other offerings I saw had old or damaged products. One tip I learned: never add the File while it's cooking! It will turn into a stringy mess. Only add it right before serving or at the table.
