Darling Nikki: I have a weakness for macaroni and cheese. Since I am a woman of a certain age, I wanted a healthier option. Butternut squash, Cashew cream, and nutritional yeast makes a nice cheese sauce. It's good that I was able to get raw Cashews at a good price.

A. Werner: I am writing this review just because I laughed at seeing the negative reviews about the cashews being "soft." Cashews themselves are nuts, not fruit, and they do not "go bad" like an apple or banana does. They are soft because they are fresh - they are most likely steamed to remove any natural toxins. The kind of cashews you get from the store are typically baked, which makes them dry and hard.
Cashews being soft is NOT an indicator that they are bad - it's an indicator that they are fresh! I found these were absolutely delicious and surprisingly sweet; I've never had an unsalted cashew before so I was very pleased by the natural taste.
I'd definitely recommend these. :)
