We Are Free: Very hard to chew dry and still hard to chew after soaking for 8hrs and even 24 hrs. Maybe this sweet flavor would be better to use in flour form.

Em: This is my first time buying and trying tiger nuts and I almost broke a tooth due to how hard these were. When the bag says enjoy them straight out of the bag, I assume they are safe to eat right out of the bag. After soaking for 48hrs... the flavor isn't bad but you are left with a splintery feeling blob of fiber that is not enjoyable at all. I have no idea if it's just this brand or if they are all this hard but I'm never buying tiger nuts again.

marbief13: These things are amazing. Here are the best benefits, IMO:

- Prebiotic, so they feed the good gut bacteria. I've read that this is more effective than trying to add gut bacteria through probiotics; it's easier to feed bacteria that is already there and enable the population to grow than to try to colonize an already crowded space with new bacteria.
- Excellent amount of fiber - 1 oz, 10 grams. Definitely seems to have a good effect on food moving through the system (don't want to get graphic here).
- Alkaline forming, so good for avoiding cavities. I often wake up in the middle of the night hungry. You can't eat anything with sugar or anything that would stick to your teeth, because you don't really want to have to get up and brush. A couple of these makes the hunger go away but don't make your mouth acidic. I eat them right after each meal to get back to an alkaline environment immediately, until I can brush.
- Taste slightly sweet but very little sugar. If you like coconut you will like these.

Now after the burst of flavor there is definitely the fiber left to chew, and there is more than that than of flavor. So you have to be prepared for that. But the...

Ben: Thousands of years ago, our ancestors pulled these things out of the ground and ate them as their main energy source. They are not nuts, they are tubers, which means they are the part of the plant where all the nutrients are stored. Our ancestors figured this out and according to various research papers ate these tigernuts while ignoring all the other stuff. A bit like how carnivorous animals in the wild typically devour the liver first, because it is the most nutrient dense part of an animal’s body — these tigernuts are the most nutrient dense part of the plant. In fact, tigernuts are more nutrient dense than red meat! They’re a great way for vegans or anyone else to get their nutrients. They’re very high in energy as well.

What makes them even more appealing is that they are very high in resistant starch (not to be mistaken with ‘normal’ starch!), which fuels the cells lining your colon. As a result, eating tigernuts improves the functioning of your gut. A few weeks ago, a guy with stomach problems told me his stomach had gotten much better after he started eating tigernuts. Gen of North Coast Gardening: EDIT: For the nut milk recipe I used, please do a web search for Nourished Kitchen Tigernut Milk and it should be the first result. I used 6 oz nuts to 2 qts water. You can use the leftover tigernut grinds as you would almond flour - I dehydrate on a low oven until dry-ish and then use right away in a recipe.

I read in The Nourished Kitchen newsletter and blog about making tiger nut milk, and I wanted to try it. The tiger nuts are so hard that before soaking, and even after soaking, they are totally inedible in my point of view. So making milk out of them is perfect.

I soaked half the bag of tigernuts in 2 quarts of water with a cinnamon stick and soaked overnight, then blended with some cardamom seeds and 2 tablespoons of raw cane juice crystals, let it set for another hour in the fridge, then strained it in a nut milk bag.

The result is delicious. Like my mom said, kind of like chai tea without the tea. It tastes sweet, and has an interesting complexity to the flavors that is not 100% explained by the cinnamon and cardamom. The tiger nuts themselves have a unique flavor that I really enjoy.
