AmazonLady: Used the desiccated coconut instead of fresh since all the fresh have a preservative and must be stored in fridge for no more than 6 weeks. Rehydrated for baking and it came out wonderful!

Pink Rose: I bought this product to enjoy making coffee cakes for my family meetings to enjoy while hanging out together. My problem is that this is a lot of coconut to buy at one time with the expiration date being extremely short. I would have hoped that paying the price of this product that it would have had a longer expiration time so that I could reap the benefits of how much I paid for it.
