BrianB: This is a winner on many levels. It is delicious, easy to prepare, takes about 10 minutes, and tastes good every time. As a side dish it goes with many different meals. Couscous is a healthy grain, with a lower glycemic index than rice or potatoes, and it is pretty hard to wreck during cooking. I did not eat pine nuts before trying this dish, but now I love them. Buying this 12-pack from amazon is much cheaper ($1.94 per box) than buying the boxes individually at our local market ($4.25 each)!
As other reviewers point out, this is still an expensive way to eat couscous, because you pay for the little spice packet, the packaging, and probably the promotional budget of Near East as well. For inexpensive couscous you can buy it in bulk, measure it out, season it yourself, plus you can throw in any spare vegetables or fruit you have on hand. If you are like me, some of those spare veggies might otherwise be neglected until they grow fuzzy, and get thrown into the compost heap.
When I am tired or rushed for time, this is just the ticket for a well balanced meal. Near East has better quality than the other couscous vendors I have tried, and the pine nut is my favorite of...
