Nickers: I watch his videos, observed his techniques and with the many claims on how wonderful folks have become loyal purchasing his products to make BBQ, I bought a bottle of BBQ sauce that was over $16 and that didn't count the dry rub. Is it sweet. yes. Does it have heat, yes. Is it balanced, NO. A true master of sauce is revealed when swiping it across your tongue to taste a symphony of flavor that no one element should overrun the flavor He got part of it right, but it's too much heat. Too much heat means you don't taste the meat or dish because the heat reigns over the whole sauce. It will be better after I doctor it to twist the heat down. Perhaps the batches aren't being consistently made? I remember someone making a pot of chili once upon a time and served it with sour cream to take the heat out (why add so much in the first place?!?

The Senate: Confession time: I'm a BBQ sauce snob. I'd say I generally don't like it at all. I've always been of the opinion that if your dry rub is right on your BBQ, you don't need sauce. If I did use sauce, it was one that I made myself. Anything from a bottle....pretty much crap, in my opinion. Overly sweet crap that took away from the taste of your BBQ. I only bought this bottle of sauce because I'm throwing a Super Bowl party, and I have enough other food to prepare that I didn't feel like making my own sauce too. I'd seen Meat Mitch's sauces spoken highly of by some pretty reputable BBQ folks, so I decided to order a bottle so my guests would have something with which to ruin all of my many hours spent at the smoker this weekend. Damn, was I wrong. This stuff is the best bottled sauce I've ever tasted, and it's not even close. A little sweet, a little spicy, and full of flavor. I just ordered the dry rub and mustard sauce too, in hopes that they'll be as good as this sauce. If you love BBQ sauce, buy it. If you're a skeptic like me, buy it. That's it, I was wrong, and I'm perfectly ok with that as long as being wrong tastes this good.
