Me: This is another one of the MANY Amazon products that they don't tell you till you buy it that it is NOT RETURNABLE. Plus it didn't work so it was a COMPLETE waste of money, time and effort. If that's what you are looking for, give it a try! Tried some 5 year old yeast I had on the shelf and that worked way better than this new product.

K. M. Schecter: I made several attempts to cultivate my own starter, but could never get a lively result. So I added this to a feeding cycle, and my formerly weak starter flourished. Lovely sourness and very active even around and slightly below 70 degrees. Very pleased.

Anastasia: The flavor of my sourdough bread was fine, but it didn't rise at all. It came out extremely dense. So I just used it to make croutons. You might as well make your own starter than paying this much for something that doesn't work.

BB: This starter worked great and I am now successfully baking whole-wheat and einkorn sourdough bread and sourdough pizza. It took about a week to get active because my kitchen is on the cool side (18C). When I saw it was slow I resolved by placing a bottle of hot water in the same cupboard of the starter and keeping a towel around the starter itself to keep it warm. Great product!

This works as advertised and gives a nice tart sourdough bread. After a while, the natural yeast cultures that favor your environment will over power this and the flavor of your bread will change, but this will get you started. This particular culture does not seem to raise as well, but it gives a very distinct tart sourdough flavor. It is an excellent way to get your own starter growing without worrying about it turning green and eating the cat or whatever botched cultures do :).
For those interested - there are bazillion natural yeasts floating in the air, and different yeasts will grow best in varying environments. The flour you use, the water you use, the temperature you keep it at, will favor some yeasts more than others. The yeasts that grow best in your environment of flour and water and temperature will eventually overpower this culture. Over the course of about 25 feeding cycles, I found that each batch would raise better and faster, but had a milder taste. It is now stable, and I have a moderately fast rising (6-12 hours for classic sourdough bread) that has a nice faint yeasty sourdough flavor.
