Geraldine: I have been looking for a bread book that is focused on classic prep methods and a wide variety of ingredients; this one checks all those boxes and more!😏
James Beard created a wonderful bread collection and offers it here with a friendly, down to earth tone throughout this charming and original book.
Everything from simple whole wheat and white loaves to rye, barley, potato, sweet breads, rolls and flatbreads. And all made the way I 💗 to make breads: by hand, yeast DISSOLVED (to actually break down the gases in yeast properly) and with plenty of kneading. Sure, most homemade bread tastes good but that imo is only "half of the story".😏 Without the hands on steps for getting there, it's just not the same.
You won't find any fancy photos in this book, it's definitely not the " coffee table variety " . What you WILL find is page after page of well loved and carefully tested classic bread recipes that will keep any home baker busy (and happy) for years to come.
I can't wait to get started! 😁
PS: I have now tried two of the recipes. One was for banana bread and one made with cooked oatmeal, both came out great! 😁

Rick: I grew up with a soft spot in my heart for this book. My father regularly baked the Parker House Roll recipe at meals with extended family. I loved them with jam, butter or even plain. We always had home-baked bread for my school lunches, and Maryetta's Oatmeal Bread was part of his regular rotation of sandwich breads.
My father thought very highly of Beard. As far as he was concerned, Beard was "the man" when it came to bread. We also had Clayton's book, but he was never all that interested in it. My father had a certain salesman quality to his bread baking, and he would build anticipation in the family over time for a new bake that he was planning. I later inherited his copy of the book, along with his markings and notations. He took us on a journey through the book that was special to me at the time, and I've never lost my interest in bread baking.
Over the years, I've baked a considerable number of recipes from this book, and the results can be quite varied. I remember asking my father once why one recipe was so salty. He had a notation to reduce the salt significantly, but he couldn't give me a satisfactory reason. It didn't matter, the Parker House Rolls were...

Ms Sandra Rhule: I love this book! Recommended by Jim Lahey's , My Bread book! However , considering this is 2020 reprint , it should have metric measures added , not just cups. Annoying to convert before I start to bake! Also the drawings should be printed darker , the drawings are hard to see!

NWAnn: This book will contain all you need. There really is no other bread book out there, that I've seen, that benefits the ordinary baker quite like this one. This is the very book my father used to raise us and so it was a must for my kitchen.
