Amy Segreti: I am a huge salt lover, and I never complain about too much salt. And still, the 1/2 cup fish oil plus more salted chicken in the Tom Kha Gai recipe is INSANELY high. It makes the salt content like 11,000 mg... I feel the 1/2 cup must be a typographical mistake. Just writing this so that you don't waste a bunch of expensive and rare ingredients just to make a soup that is impossible to eat besides discarding tons of the broth (even after adding an additional can of coconut milk, it's hard to save it).

Victoria Q.: I have had this book for several months now. I have made at least 8 or 9 recipes; from side dishes (eg: Brussels Sprouts with Chilies, Lime and Mint) to entrees (eg: Glazed Chicken Thighs with Ginger, Garlic and Scallions) to desserts (Chocolate Brownies with Caramel Sauce, Berry Clafoutis) and every single one has been a resounding success. I have now made the Chicken Thighs 5 times in a row (make a new batch when I eat up the old one); I am cooking for myself and can only rarely eat all the leftovers of any given recipe. That recipe has always been finished. I have brought the brownies to 3 different parties, and they have disappeared within 10 minutes, and people always ask for the recipe. I recommended this book to a friend of mine, she made several recipes that I haven't, and she raved about all of them. His flavors are so bright, so flavorful and so fresh, so clean. As a non-insulin dependent type 2 diabetic (who has the disease very well controlled with vigilant diet, medication and exercise), I appreciate that these recipes are Paleo based and contain no/minimally processed ingredients. I appreciate Chef Gourdet's focus on clean, healthful eating. I will say that many of...

D'lyn of Newberg Or.D'lyn of Newberg Or.: I've now made several dishes from this amazing Cookbook. Here are just 2 that I've now made a staple as they are a crowd pleaser, roasted Brussel sprouts with kimchi and glazed chicken thighs with garlic, ginger and scallions. Beautiful images, just all of it. I followed recipes and made very little changes (milder chilies on some recipes as husband likes slightly milder) also used light tamari instead of amino as I preferred a little less sodium after my first try. I could go on and on about this book but I'll leave it here!

Nicole L.: I bought it after reading the Top 10 cookboks on Serious Eats: natural ingredients all the way through and a final dish big on flavour…Jamie Oliver does that with the use of fresh herbs.

Ayla: We've loved Gregory since being introduced to him on top chef. His cookbook is absolutely beautiful and we love that the recipes are all gluten free and relatively healthy. The only downside is that many of them call for an overwhelming amount of salt. I'm actually surprised that no one else has mentioned this yet (one recipe had 2.5 TBSP plus a cup of olives which are also quite high in sodium). We tried the first recipe with the amount of salt he had listed just to see and and we'll definitely be cutting way back with future recipes - an easy fix but for anyone that eats a normal amount of salt, you'll want to do at least half of what's listed.

Meghan: I've followed chef since he first appeared on Top Chef, and always loved his take on interesting ingredients. I don't eat meat or dairy, and this cookbook is right up my alley. Yes, some ingredients are hard to source, but if you're an experienced cook and can't find said ingredients, you can easily figure out how to substitute. His recipes are delicious, and the plates are beautiful. I highly recommend this to any experienced cook, as well as anyone looking to expand their repertoire.

Rl: Amazing recipes. My husband and I have finally both gone Paleo, and giving up all our global flavours while we tried to hunt down recipes was depressing.
The recipes in here are fantastic, with so many impressive options for dinner parties too! We're so excited about this fantastic addition to our cook book collection.

Jeanette Parkinson: Wow, what a gorgeous cookbook, I own so many cookbooks but this is by far the prettiest. I just got it and spent 3 hours looking though it and have got a list of groceries going to make several of the dishes. I can’t wait to use this book. Some reviews are saying it is complicated, I disagree. So you need to make a sauce ahead of time, doesn’t make it complicated, just may take you a bit more time. So, yes, maybe not busy weeknight meals but that doesn’t make it less than 5 stars. I would give it more if I could. If you want to make delicious, healthy food, I 100% recommend getting this book!
