Kathryn Saussy: I am a huge fan of Deborah Madison, so of course - in the end - I love this and use it. However, 3 stars because this does not seems as complete as the original, in sections like the separate vegetables. I had given away my 20+-year old copy of this bible of vegetarian cooking. It’s worth noting that I am not a vegetarian, but I frequently refer to this book as reference. I feel that it’s lacking in complete reference now, although I cannot provide data on this. Additionally, the quality of paper is rather cheap! It’s almost like newsprint. This makes it harder to write notes on the pages (i.e., bleeding ink). The lack of proper weight and smoothness of the pages just irks my brain in a way that sounds ridiculous on this review, but there it is.

SherryB: I have the original Vegetarian Cooking for Everyone that she wrote 17 years ago and have used it a lot. Having owned that one plus one other cookbooks by Deborah, I had high expectations for this newest one. Wow! It has far exceeded my expectations. Upon receiving it, I had planned to thumb through it briefly and get on with other things I had to do. Three hours later I was still glued to its pages! Without a doubt, a large amount of work went into this one. I am a meat eater but enjoy a lot of vegetarian meals and this one is sure to get a lot of use in my kitchen. It's hard to say which chapter I like best, but certainly the pages on sauces grabbed my attention, also the chapter on tarts and gallettes. . . oh, here I go, thinking of all the great recipes all through the book!

Ken AndersonKen Anderson: My book came today, and I am very happy with it. I get the feeling that the book is not new, that it was perhaps returned by a prior buyer, largely because one of the pages has been turned over, as people sometimes do as a bookmark, but I suppose that could have happened during handling. It does appear that the pages have been turned, however.
Still, it's in good shape, and I didn't buy it as a collector's item, so it would have that used look soon enough, anyhow. Cookbooks aren't meant to be pristine, although there's nothing wrong with starting them out that way.
I haven't actually used any of the recipes yet but I have paged through them and am impressed. There are several introductory sections, at the beginning of the book, and for each section, which appear to be well-written and helpful. There is a good balance of recipes, and the recipes themselves are explanatory. It is a huge book with a lot of recipes and other useful information.
I pick up on things like typos and misspellings pretty quickly and haven't come across anything that jumps out at me.

J. Sherwood: By way of background, I am an experienced - albeit not a gourmet - cook, with a wish to have more vegetarian options in my repertoire. This is the best cookbook that I've ever used, and comparable to the Joy of Cooking is its range and everyday utility.
I believe that people's mileage does vary widely in using cookbooks. In my case, I've bought a number of Mark Bittman's books, because I love his philosophy, and like his meal planning and modular approach to cooking. I really appreciate the underlying thinking that cooking should be less recipe driven and more of a flexible approach to what's in your kitchen, or fresh and seasonal. That said, I've found many of the recipes that I've tried to be very pedestrian in flavor - they taste like they were created by health conscious folks in the 70's. Other recipes have had seasoning that is so pronounced that the end result is inedible (3 Tablespoons of cumin? Really??? Was that a typo?), had major timing issues, or required ingredients that I generally don't have. However, other people do love using his cookbooks, so YMMV.

Christine Farley: not sure why everyone is complaining about the book cover - seems just about as bad as every other hardcover cookbook I have bought in the last few years and is more than balanced by the fact that the recipes are so good! As for the gentleman who gave the book a 1 star just on the word of others having never seen the book (as per his review) not sure how that should be taken into account by anyone!

Lucy: It is a great cookbook but the quality of the book cover is the lowest I have ever seen. The paper cover doesn't fit the book properly and both the inner and outer covers are just paper that is not at all water or stain resistent. If you decide to take the ill-fitting outer cover off the inner cover has no design and is just depressing grey paper. It is a very good cookbook though so I guess you just have to put up with the crappy publishing.

breexox: Thousands of recipes and they are nearly all simple and have variations listed. It's actually crazy how much is in this book. Want to know how to cook anything besides meat, any time of the year? Here you go. Sad I've wasted money on other vegetarian/vegan cookbooks that only had a small selection of really specific, detailed recipes of which I only ever made a few and sad that I've spent so much time scouring blogs for recipes when I could have just had this book all along!
