Graham McFadyen Hill: Very interesting selection of mains and sides. I have prepared several meals using these recipes, and all have turned out well. Reducing quantities for a one-serving recipe is not easy, but this book is full of successful examples.

Mom the handyman: I actually like cooking - and for the most part- do end up cooking for myself (kids are grown). Definitely will use - like the ideas in this cook book and actually am kitchen savvy enough that I could double the recipe if I need leftovers (lunch for work the next day). Have to watch certain types of food (yes - at that age…) and still in the mindset of cooking for three sons (had to get a pasta measure thing so I stopped cooking enough pasta for most of my neighborhood). I’m sure I’ll make changes for my taste - but isn’t that what cookbooks are for???? 🙃

Erik: Many recipes use the same cooking techniques but vary the flavor by using different sauces or spice combinations. Recipes are right-sized so there are not a lot of leftover ingredients to be used up. Recipes are practical for everyday for one person to make quickly for themselves without a lot of fussy steps.

Spencer Wilson: Wish I had purchased this years ago. It is my most used cookbook now. I travel a lot with work and don’t like restaurants so this is my new go to cookbook. Am considering buying another one for my wife. Trust in Americas Test Kitchen, everything they publish is worth buying.

Richard Adams: There are some good recipes in this book, but by and large the claim that this is 'Cooking for One' is misleading. Many recipes (it felt like over half of them although I've not gone through and counted) state openly that they have leftovers - in other words they serve more than one. They won't tell you how many they actually do serve, though, so you can't scale the recipe accordingly, except by educated guesswork. And some of the recipes that do serve one are a little obvious - how to cook a steak, for example.
Overall, this feels like a recipe book that I might dip into very occasionally, largely when I force myself to, but it's never going to be one of those books that I reach for time and time again to find something to make. It's just not that useful.

Lis A.: This book (like ALL Americas Test Kitchen books) is essential for anyone to learn much more and change the way they cook. I was even more pleased than usual as I was really struggling with cooking just for myself. This is an amazing book as all the rules for cooking for 2-4 or more just dont apply to cooking for one.
