giocar59: Si, è proprio così, non so se tornerò mai a comprare del riso........"normale". Da quando ho cominciato a cucinare (andando oltre le uova al tegamino e agli spaghetti al burro) sto imparando a scoprire e soprattutto ad apprezzare le "materie prime" di qualità, cercando di ascoltare i vari chef sui media e prestando attenzione ai veri estimatori ed anche ai commenti delle "buone forchette"! Ed ho scoperto Acquerello , un veloce approfondimento sull'azienda e sui commenti esterni ed ho voluto provarlo. Lo ammetto, ero quasi sicuro che, da "ignorante", non avrei trovato poi tutta questa grande differenza dai vari marchi di riso da supermercato (e parlo di marchi famosi ovviamente, non da hard discount). E invece.....la differenza c'è e vale tutta la differenza di prezzo. Già nella cottura ho notato una maggiore velocità nel raggiungere la consistenza che mi piace e poi l'amido che rimane nell'acqua di bollitura è quasi tre volte meno degli altri carnaroli che usavo. E questo è importantissimo sia nella preparazione di risotti (che a fine cottura non diventano cemento a presa rapida se non li mangi immediatamente) ma anche nella degustazione persino di un semplicissimo riso...

This arborio rice is cultivated to hold up to the slow, patient simmering process for risotto and still keep some al dente along with creaminess. Any good recipe will require chicken broth (I use vegan chicken bouillon), and slow, patient, stirring. My recipe calls for a half-cup of dry white wine, so I add my favorite chardonnay then pour a glass to sip during my "risotto making meditation".

Amazon Customer: I have to say after years of buying what was available in my grocery store, this Rice has changed my mind about Risotto. I would make risotto with other brands, and the risotto never quite tasted good, and the rice didn't hold up well. Acquerello Brand has changed my mind, and my risotto is totally different now. Nice texture, holds up, and flavor is amazing. You should do your research on this product. Well worth the time and they are doing some special things with aging, and nutritional value.
