The problem with using a knife is that you can't get uniform slices, the slices stick to the knife and can be broken and there's always a chance you may cut yourself.
Believe it or not, it's going to take a YouTube video and some practice, to learn how to use these slicers properly. But, my first attempts turned out pretty good. The shaver / curler does exactly that, giving you very fine slices, almost like using a planer, giving you a very fine slice. It's not great for soft cheeses. But, for your firm blocks, it's great.
The adjustable slicer isn't as great as I wish it was. The wire flexes a lot, giving a bowed cut. I'm afraid that if I tighten the wire too much, it will break. And, the thickness adjustment screw does not stay tightened very well, making your slices not very uniform. I guess you have to use a pair of pliers to tighten it well enough to keep it from slipping.
It could be that I'm just not familiar enough with these tools to know how to use them properly. Like I said, maybe some instruction and practice is called for. But, just from my first try out of the box, I'm not totally satisfied with this product.

The cheese plane works as I hoped it would. Best on room temperature cheese. The wire cutter not very good. Frustrating. Makes you want to just take out a knife and cut it.
