Kelly Grayson: I throw a strip of this in the pot with the aromatics when I am cooking a pot of dried beans. It seasons and softens the beans, supposedly making them more digestible. If you have fairly fresh dried beans, you can even skip the soak and throw in some kombu. I keep it in a ziploc in the pantry and it lasts for ages. Works great.

Robb Hammack: bought to use in making homemade dashi stock. worked well,soaking overnight in the fridge resulted in an flavorful, umami rich liquid. I also soaked bonito flakes and dried shiitake mushrooms separately so I could mix and match to tailor the flavor for the food to be cooked

wje: I am so tired of the idiotic 1 star reviews from people that have no idea what they're buying. So, this is a specific kind of seaweed for making dashi, a classic broth used in a lot of Japanese cooking. You don't eat it. The white stuff on it isn't mold and should never be removed. You use it with dried fish flakes to make a broth. Period. If you want to use it for what it's intended for, fine quality for making dashi, just a bit lacking in that 'white stuff', hence the 4 stars. If you think it's something else, you're wrong.

Nicole Mizzi: I use this to put into the pot when im making sushi rice. Just gives it a bit more of a nice flavour. Works great! I haven't ever used it for anything else. But packaged great! Seems to be good quality.
