Jose M: I wasn't getting what I wanted from the boxes of miso soup they would sell in the grocery. Using this, along with Bonito & kombu made my miso soup turn into what I want when O go to a sushi restaurant. Very tasty, the miso bloomed in the soup the way it does when it's done right and the quality for the price means I will have a lot of soup to make!

Michael: Shinshu Ichi Miso White Soybean Paste White has a very nice mild flavor. Excellent alone in a hot cup of water or as an ingredient other food to "spice them up."

Kime: Used it to make a miso vinaigrette! A little went a very long way. Olive oil, rice vinegar, ginger, garlic, sesame oil, and a bit of this miso! Delicious!

Nooneimportant: This is a verygood miso. I enjoy it. I have read a lot of comments on here people complaining about this miso not being a white color but red or brown. From experiences of eating miso a lot..all white miso will eventually turn brown or red color due to being sit in a warm climate (for example like amazon keeps their stuff in a warm climate possibly) though the color has changed..it does not mean the miso has gone bad. Due to the salt and certain fermented ingredients in the miso, due to temp and the longer it is, it changes color but it is still good to use. Miso last for a long time. Especially in your fridge. Usually the miso is completely white because it is freshly made from the factory and they package them up..from later on they will change in color but is still very good to eat, it does not mean it has gone bad. Even after expiration date..the miso is still good to use and does not go bad fast..can last up toa year if anything. ANYWAY I hope this help anyone who thought their miso purchase has gone bad due to change of color.
