Amazon Customer: I like these because they fill the "no flour" noodle void in my food plan. They have a nice chewy texture and no flavor to speak of, so they fit into any dish I make. I've used them in Italian, Asian, cold salad.

Etsuko Ueda: I missed glass noodle salad since started keto. But, when I was ready to cook it, I could not find my baking soda. In my desperation, I boiled the noodles but no change. I added salt to the boiling water but no change. Then I remembered that I have left the baking soda in my bathroom. I drained the noodles out of the hot water and poured the baking soda and water mixture over the noodles in a bowl. The noodles turned soft right in front of my eyes. At this point, lemon juice did not seem needed. For the second package, I rinsed the noodles and mixed in the baking soda and water mixture. It took a while for the noodles to get soft. Lemon juice and baking soda neutralize each other, so I cannot figure out why lemon juice. Does it improve the flavor? In any case, I am glad to have found this product.

EbzEbz: I have recently started a raw food diet and was looking for a little variety. I just made a super delicious Indonesian style dish with these. As I'm eating them raw, I followed the instructions. I soaked 1 package in cold filtered water and untangle them. Strain. In a separate bowl add a cup of filtered water, juice of 1 lemon and a tablespoon of baking soda. I massaged the noodles then let them sit for about 5-8 minutes while I made the sauce. When I returned to them they were very soft, like cooked pasta. I strained, rinsed and strained again... added my sauce, veggies and Viola! These turned out AMAZING!!! I saw some reviews talking about a vulgar taste, but mine had no taste at all. My packet of noodles was moist but it didn't have water in it. All 6 packs are the same color and moisture, so I think if yours don't look the same, or have a vulgar taste, then it's probably a bad batch.

Amazon CustomerAmazon Customer: Received today and one out of the three packages is a different colour. Don't trust that it's not gone bad before expiry date. Was very disappointed that this item isn't eligible for a exchange or return. Surely a defective item should be exchangeable.

Miss Avery: After reading the reviews I decided to buy these as I’ve been searching for a low carb pasta substitute. Initially I added the baking soda and lemon as instructed to soften the kelp. But I made the mistake and didn’t add the appropriate volume. As a result, the kelp turned too mushy. I ate it anyways and by the time I was finished, it seemed extra salty. Maybe it gets salty the longer it sits. Who knows. I refrigerated the remainder and the next day it literally looked and had the texture of slime. So, the lesson is eat it immediately or split serving sizes; Leftover are a definitely no!

Asia: Low-carb and low-calorie. Taste is amazing; neutral, so it takes on the flavor of any sauce or broth it's in. Perfect texture after soaking (in warm water, lemon juice, and baking powder) and draining for a few minutes. I'd appreciate if one pack was not so expensive though, the "price:product" ratio is what causes it to lose a star.
