MPRUETT: It's cut into matchsticks and isn't quite the exact same sort of pickled ginger as eaten with sushi. This is the same thing I believe as "beni shoga" which is a common garnish on okonomiyaki and yakisoba.

rynbaskets: Many similar products are made in China. This one is made in the USA. I trust the food safety system in the US over one in China. The taste is what I expect from red shoga but the price is a bit higher than what you can buy from stores.
Edit: I noticed that some people are saying this ginger tastes different from what they ate at sushi restaurants. Of course it does, because this is not the same kind of ginger they serve at sushi restaurants. The ones they serve at sushi restaurants are pink, much softer and in general sweeter than this products. Red gingers like this are used for completely different dishes. If you’re looking for ginger similar to what sushi restaurants serve, you need to look for pickled sushi ginger or Gari (ガリ) in Japanese.

Amazon Customer: Yes, it's pricey, but it's worth it -- unless, of course, I find it somewhere else at a better price. But, oh, the taste! I've been eating this yummy pickled ginger in my noodle soups for years and have bought kizami shoga ginger (the salty pickled ginger) from my local market until I moved recently and now have to order online. This brand is so much better than what I've eaten and loved for years.
This comment is in response to those people who gave this item a low feedback because it's not what they were expecting: This ginger is salty and not sweet. It is not the kind of pickled ginger you get with sushi. But if you love vinegary, spicy (not hot, though) flavorings in your noodle soup, do give it a try. It is delicious!
