Reader: Smooth taste. But the best thing about Guittard is that they buy ethically-sourced cocoa beans. Most beans are grown in two countries, both of which use child slaves. Investigate for yourself, then buy only from companies that do not support child trafficking and slavery.

DCH: For baking purposes, most 100% chocolates are ok, and hard to differentiate in the final product. However, I like to eat it plain, and then subtle (and not so subtle) differences are much more noticeable. I think I've tried every 100% chocolate in the market, and I put Guittard and Ghirardelli at the top (some days I prefer one, and other days the other way around).
Btw, if you are used to the (for me too sweet) bittersweet chocolates, all 100% chocolates will taste horrible ;-)
And like with wines, chocolates are being marketed through packaging, fancy stories, and ridiculous prices, none of which correlate well with the quality of the chocolate - and that's before I get into the "single cru" concoctions...
