Robert Mauro: These used to be the best true low carb pasta substitutes on the market. I've bought SOOO many of these over the last half decade. I used to buy 8 or more packs a month.

Then, they changed something about the pasta, whether the ingredients or how they make it, and cooking times increased to as much as 30 minutes for a very serious al dente. Still, not bad, and it worked.

But almost a year ago, they changed things again, and now went WAY too far in the other direction. Now, no matter how carefully you try to cook these, or how short a time you cook them, they turn to mush and leave a mushy goo all around them making them useless for most dishes. And if by some miracle, the mushiness isn't crazy, just plop them in some sauce and let them sit a bit. On top of that, there's a 35% increase in price for what's now a crappy product.

Now, I buy as few as possible, and only so I have something to try to satisfy my pasta/carb craving on my ketogenic diet. So, maybe I will get a four pack once every 2-3 months.

If I find an alternative that's even halfway decent, I am stopping my purchases altogether.

So, note to new buyers: unless they correct the recipe...

Kindle CustomerKindle Customer: I really wanted to like this. I've been doing Keto for awhile and have really missed pasta. So, when I saw the good reviews I decided to try this "pasta" only to find out I wasted my money. I was so excited after reading the reviews I shared a bag with my niece who does Keto and one with a friend whose husband is diabetic. The first bag I tried I thought it was my fault because I cooked it in a wrong pot. I dressed it with garlic and olive oil, my favorite way to eat pasta. The second bag was in the right pot and used it to make turkey Alfredo. (See picture.) I cooked on salt and olive oil. After drsining, I added butter, Alfredo sauce, turkey, Mozzarella, and Parmesan. My reaction once I took my first bite was again: Yuk! Basically heard the same thing from my niece and friend after they cooked theirs. I expected some texture difference but not such a drastic difference. The flavor was also terrible. It was like eating, I imagine, chalk but chalk would probably taste better. I will not be wasting my money on this again.

Eco Cat Lady: Well, I wanted to love this stuff but I'd give it a C minus at best. I bought the combo pack and so far I've only tried the fettuccini but I'd have a hard time calling this stuff pasta. Out of the package all of the noodles were stuck together in clumps. I put it into the boiling water expecting them to separate, but they never did. I tried everything I could think of. I stirred, I used a fork to try to break them up, I even took the clumps out of the water after a while and tried to separate them manually, but nothing worked. It was like the "noodles" just wouldn't get soft. I live at about 6000 feet so pasta generally takes longer to cook than it says on the package, but I boiled this stuff for nearly 40 minutes and they never reached anything remotely resembling the texture of pasta. When I finally gave up and decided to eat it anyway it has a really chalky mealy texture and doesn't taste anything like pasta.

I dunno. Maybe some of the other shapes will perform better, or maybe it just doesn't work unless you're at sea level, but I think there are better alternatives out there.

UPDATE: So I tried the rotini. It didn't have the clumping problem that the fettuccini...

missfussybritches: Update: I am still alive and the last bag I tried was the elbow pasta and made me live my best life for one meal at least. Cooking it for twice as long as what the instructions say (as other reviewers have recommended) is the key to giving this gluten mutant a glow-up. I’m surprised the inventors don’t recommend twice as long boiling in their instructions. It makes me think they like chewing on the big sidewalk chalk or they like other things that are full of hate like black licorice. Maybe they are sadists. I have repurchased the elbows only and now recommend them to the rest of you carb plebes.

These made me want to end my life. Everyone who says these taste like “real pasta” must have lost their taste buds in the war or haven’t expanded their palette past Chef Boyardee or Hamburger Helper.

I made Penne alla Vodka with real Parmigiano Reggiano, Proscuitto de Parma, vodka, and cream—that part was mwah eccellente! The penne was so displeasing it’s the closest I’ve come to calling the grim reaper to just do it already and take me. I followed the instructions, then added two minutes because the tubes were still hard enough to play the entire Tom Sawyer...
